  • 750g Chops (lamb/goat)
  • 1/4 cup hot sauce
  • 2 tbsp soy sauce

For the batter

  • 1/2 cup self-raising flour
  • 1/4 tsp salt
  • 1/4 tsp red chili powder

Method to Prepare

  • Add chops to a large bowl.
  • Add hot sauce, soy sauce, ginger paste, white vinegar, salt, and red chili powder to it.
  • Then, add 1 to 1/2 cup of water.
  • Cook them on slow flame for about an hour. Cook until all the extra juices are evaporated.
  • Transfer them to a plate and let them cool.
  • Now, take a bowl and add self-rising flour, salt, red chili powder, and water to make a thin batter.
  • Now, dip the chops into the batter then transfer them to bread crumbs.

For Shami Kabab Spice Mix:

  • Red chili powder, one teaspoon 
  • Cloves, five  
  • 2-inch cinnamon, broken
  • Big black cardamom, one-piece

  • Coriander seeds, one teaspoon 
  • Cumin, one teaspoon 
  • Salt, one teaspoon

For Cooking Meat:

  • 500-gram boneless mutton, cut into small cubes
  • Split chickpea, one cup, soaked for at least two hours in warm water
  • Shami kabab Spice Mix, as per taste 
  • Oil, two tablespoons
  • Mint leaves, ½ cup
  • Green chili paste, one tablespoon
  • 2-inch ginger 
  • Four fat cloves of garlic, 
  • Turmeric, ½ teaspoon 
  • Water, one cup 

For Forming Kabab:

  • Fresh coriander, three tablespoons, chopped 
  • Chopped mint, two tablespoon
  • One teaspoon chat masala, or more to taste
  • Onion, one, chopped
  • Egg, beaten, one 
  • Hard-boiled eggs, two 

For Frying: 

  • Three eggs for egg wash.
  • ¼ teaspoon salt
  • ¼ teaspoon red chili powder
  • Bread crumbs, small bowl 
  • Oil, for frying  

Method to Prepare:

  • First, we will prepare the spices mix for the kabab. 
  • Roast all the spices on medium heat for around 1-2 minutes until fragrant. 
  • Now, grind all the roasted spices finely, and your spice mix is ready! 
  • Take a pot and all the ingredients of cooking meat. 
  • Cook these ingredients for about 45 minutes until the meat is tender and the lentil is soft.
  • Keep stirring and burn all the excess water. 
  • Let the mixture come to room temperature. 
  • Add this mixture to a chopper and make a smooth mixture of dal and meat.
  • Take a large dish and add the kabab mixture, mint, fresh coriander, boiled egg, one beaten egg, chopped onion, chat masala, and salt. Mix them well.

  • Then, add red chili powder, coriander powder, haldi, yogurt, and garam masala.
  • Fry everything until the oil separates.
  • Then, add the nutmeg, cardamom, spice masala, and 3 cups of water.

  • Take boneless cube meat of goat or lamb.Keep cubes small so it is easy to cook.
  • Mix raw papapya paste, ginger garlic paste, and green chili paste. Let it marinate for a couple of hours.
  • After two hours, add salt, red chili powder, garam masala, star anise powder, yogurt, poppy seeds, and fried crushed onion.
  • Now, let it marinate for about 4 to 5 hours.
  • After overnight marination, take out the meat.
  • Just before cooking, add mustard oil and white vinegar to it.
  • You can cook them in oven or in pan.
  • For oven, preheat the oven to 175 C.
  • Thread the skewers with meat and keep them on baking pan.
  • Cook them for about 40 minutes. After 20 minutes, turn the side so they are cooked equally from each side.
  • Brush oil at the end for moisture and shine.
  • Avoid brushing oil in the beginning or the spices will fall down.

  • Add ginger, garlic paste, coriander powder, red chili powder, homemade garam masala, and fried onion. Mix thoroughly. 
  • Now, yogurt and rose water. Once again, cover the lid and let it cook for another 5 minutes.

  • Soaked basmati rice, two cups 
  • ½ medium onion
  • Peppercorns, ½ teaspoon 
  • 2-inches Cinnamon stick
  • Nutmeg powder, ½ teaspoon
  • Six cloves garlic
  • Coriander seeds, one teaspoon
  • Salt, as required
  • Crushed to paste ginger, ½ teaspoon
  • ½ medium chopped tomato
  • Yogurt, ½ cup 
  • Red chili powder, ½ teaspoon 
  • Two green cardamom
  • 100-gm ghee
  • 500-gm mutton, chopped into cubes
  • Two black cardamom
  • ½ teaspoon clove
  • One bay leaf
  • ½ teaspoon mace powder
  • 2 inches ginger
  • 4 cup Water
  • ¼ medium sliced onion
  • ½ teaspoon crushed to paste garlic
  • One teaspoon of cumin seeds
  • ½ teaspoon coriander powder
  • One teaspoon of garam masala powder
  • 1 ½ teaspoon fennel seeds

Method to Prepare:

  • First, you will have to prepare a bouquet of garni. 
  • Take onion pieces, garlic pods, whole ginger, bay leaf, black cardamom, black peppercorns, coriander seeds, cinnamon stick, cloves, nutmeg, and mace, and tie it in a clean muslin cloth.  
  • Wash mutton and keep it aside. 
  • Take a cooking pot and add three cups of water, cubed mutton, and a teaspoon of salt. 
  • Now, turn on the flame, add prepared bouquet garni and boil for around 20 minutes or until the mutton is done.
  • Take the bouquet garni out and keep the stock with mutton pieces aside. Your ‘yakhni’ is ready.
  • Now, take a pan and heat ghee in it. Fry onions and keep ¼th of it aside for later.
  • Add cumin seeds, ginger-garlic paste, tomatoes, salt, red chili powder, and coriander powder to the remaining onions. Stir fry for around 3 minutes. 
  • Now, add yogurt, garam masala, and green cardamom, and cook on medium-high heat till the tomatoes get tender. 
  • Then add fennel seeds and mutton pieces to the masala and let it simmer for around 2 minutes.
  • Now, add this masala to the prepared “Yakhni” in the cooking pot. 
  • Turn on the heat and let the rice cook uncovered for 5 minutes. 
  • Sprinkle fried onions that we saved earlier on the rice, add one tablespoon of ghee and seal the pot with foil or atta dough so that the flavors do not escape.
  • Cook on low heat for around 15 minutes or until the rice is done.

  • Almonds, pistachio, and cashew, three tablespoons each, crushed

  • Take a stainless steel pot and add all the ingredients of sheer to it. 
  • Put that pot on a low flame, bring it to a boil, and simmer it for 3o to 40 minutes. 
  • Meanwhile, take a pan and fry vermicelli in one tablespoon of butter on slow to medium flame until fragrant. 
  • Now, add this fried vermicelli to the simmering milk pot.
  • Now, fry dry fruits in ½ tablespoon of butter for around 30 seconds on medium flame. 
  • Add these fried dry fruits into the simmering milk pot. Save some nuts for garnish.
  • Finally, add raisins and dates to the milk.
  • Simmer this mixture for another 10-15 minutes until thickened.
  • Serves hot or cold to taste.
