Ingredients 

For one pot Jeera pulao

  • 1 cup Basmati rice
  • 1 tbsp Oil
  • 1 tbsp Ghee
  • 1-inch Cinnamon stick (dalchini)
  • 2 cloves (laung)
  • 2 Green cardamom (elaichi)
  • 1/2 Mace (javitri)
  • 2 medium Bay leaf (tej patta)
  • 1/2 to 1 tbsp Cumin seeds (jeera)
  • 2-3 Green chilies (chopped or slit)
  • 4-5 Mint leaves (pudina)
  • 2 tbsp Coriander leaves
  • Salt to taste

For Restaurant-style Jeera rice

  • 2 cups cooked Basmati rice
  • 1 tbsp Oil
  • 1/2 to 1 tbsp Cumin seeds (jeera)
  • 1/4 tsp Cumin powder
  • Salt to taste
  • Coriander leaves for garnish

Method to Prepare 

Pressure Cooker Method 

  • To make jeera rice in the pressure cooker, you will need to rinse the basmati rice 2 to 3 times, until the water runs clear. 
  • Then, soak rice in an ample amount of water for at least half an hour. 3 cups of water is ideal for soaking the rice well. 
  • Now, take a heavy bottom pan and heat ghee in it. When hot, turn the heat to medium and add the whole spices. 
  • Saute the whole spices for a few seconds until they’re aromatic. 
  • Now, add green chilis and saute them for 5 seconds. Turn the heat to high and add 2 cups of rice-soaked water into the pan. 
  • Then, add mint and coriander leaves and let the water come to a roaring boil. 
  • Once it is boiled enough, add the rice and give a good, gentle mix. 
  • Add salt into the rice as per your taste along with lemon juice and give it a good stir. 
  • Now, cook the rice on high flame until the water is reduced and reaches the level of the rice. 
  • Then, turn the heat to low, cover the pan, and cook the rice for 10 to 12 minutes. After that, turn the heat off and let it rest for 10 minutes. 
  • After 10 minutes, open the lid and fluff the rice with the help of a spatula.
