Semolina, farina, plain flour, or a combination of all of these flours are used to make Ma’amoul traditionally. You can use dates or nuts as filling but go with Medjool dates if you want the authentic taste. You will not need to add too much sugar as dates will naturally sweeten your cookies.

Ingredients 

For the filling: 

  • 1 cup of pitted Medjool dates, chopped
  • ¼ cup of water
  • Pinch of salt

For the dough:

  • 2 cups all-purpose flour
  • One tablespoon powdered sugar 
  • One teaspoon baking powder
  • ¾ cup butter softened and diced
  • Two tablespoons milk
  • Two tablespoons rosewater

Method to Prepare 

  • Take a small saucepan and heat it over medium-low heat. Add dates, water, and salt to it and cook until the dates are broken down into a paste, for about 3 minutes. Keep it aside to cool.
  • Meanwhile, preheat the oven to 325°F. 
  • Now, prepare baking sheets by lining them with parchment paper. Keep them aside. 
  • Add flour, sugar, baking powder, and butter into the food processor jar. Then give it a pulse. 
  • Then, combine milk and rosewater and pulse it again until everything is incorporated. 
  • Gather the dough and divide it into 20 equal balls. 
  • Take one dough ball, flatten it with your palm, and pinch it into a bowl shape.
  • Fill the center of the dough with a teaspoon filling, bring up the sides and seal it. 
  • Now, flatten it slightly by rolling it and placing it side down on the prepared cookie sheet. 
  • Follow the same process with the remaining dough and date filling. 
  • Give it a decorative touch on top with a fork or toothpick. Slide them into an oven and bake them until they are just beginning to turn golden brown for about half an hour. 
  • Dust these cookies with a generous amount of powdered sugar while still warm. 
  • Serve it, and enjoy!
