Ingredients 

For  Spring Rolls

  • 2 ounces rice vermicelli 
  • One teaspoon toasted sesame oil
  • ¼ teaspoon fine sea salt
  • 1 cup torn butter lettuce, ribs removed
  • 1 cup very thinly sliced red cabbage
  • Two medium carrots, peeled and cut into matchsticks 
  • One small cucumber, thinly sliced 
  • Two medium thinly sliced jalapeños, ribs, and seeds removed
  • ¼ cup thinly sliced green onions
  • ¼ cup roughly chopped fresh cilantro
  • ¼ cup roughly chopped fresh mint
  • Eight sheets of rice paper (spring roll wrappers)

For Peanut Sauce

  • ⅓ cup creamy peanut butter
  • Two tablespoons rice vinegar
  • Two tablespoons reduced-sodium tamari or soy sauce
  • Two tablespoons honey or maple syrup
  • One tablespoon toasted sesame oil
  • Two cloves garlic, pressed or minced
  • 2 to 3 tablespoons water, as needed

Method to Prepare 

  • Take a pot and boil noodles according to package instructions. 
  • Rinse them under cold water, drain them, and return them to the pot. 
  • Toss them with sesame oil and salt without turning the gas on and keep them aside. 
  • Now, take a shallow pan and fill an inch of water. 
  • Take a small bowl and add green onion, cilantro, and mint. Give them a good stir. 
  • Now, fill a bowl with water and place one rice paper in it for about 20 seconds. 
  • Let the sheet soak in water until it is pliable but not super floppy. Carefully lay this paper flat on the towel. 
  • Keep the edges of rice paper without any filling. Now, use butter lettuce to cover the lower third of the paper. 
  • Then, add some boiled noodles, cabbage, carrot, cucumber, jalapeño. 
  • Now, freely sprinkle the herb mix. 
  • Start folding from the lower edges and rolling upward until the filling is enclosed compactly. 
  • Then, fold the short sides like you will fold a burrito. Finally, roll it up and repeat with the remaining ingredients. 
  • Once your rolls are ready, make the peanut sauce. 
  • Take a small bowl and add peanut butter, rice vinegar, tamari, honey, sesame oil, and garlic. 
  • Whisk them together to combine them well. Add a few tablespoons of water as needed to make a super creamy but dip-able sauce.
  • Serve the spring rolls with peanut sauce and enjoy!
