Method to Prepare:

  • Gather the ingredients.
  • Pour the juices and grenadine into a cocktail shaker filled with ice.
  • Shake well.
  • Strain into a chilled Collins glass filled with fresh ice.
  • Top with the ginger ale.
  • Garnish with slices of pineapple and/or orange.

Ingredients:

  • 1/2 cup quality extra virgin olive oil
  • 2 cloves of garlic chopped
  • 1 medium onion finely chopped
  • 2 tablespoons tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon Primal Palate Amore seasoning see note
  • 2 cups of mini heirloom tomatoes see note
  • 1/2 cup fresh shredded Parmigiano cheese
  • 1/2 cup heavy cream
  • 1 pound cooked & drained pasta

Method to Prepare:

  • In a large pot, bring pasta water to a boil and cook according to package instructions. Don’t forget to salt the water.
  • In a large skillet, heat up the olive oil over medium heat. Chop up the garlic and onion, finely and evenly. Add to the olive oil and cook until soft and translucent
  • When the onions are cooked, stir in the tomato paste, salt, and Amore seasoning. Combine the tomato paste well. However, it is normal for it to look like it is separated from the oil.
  • Add the whole mini tomatoes and cook until they become soft. Once soft, use the back of a wooden spoon and gently press on the tomatoes.
  • Stir in the Parmigiano cheese to slightly melt. Then stir in the heavy cream.
  • Allow all of the ingredients to simmer for about 5 minutes until slightly thickened.
  • Serve over cooked pasta. I used penne for this recipe but any works well.

Mexican Pizza

Since two of our favorite styles to cook are Italian and Mexican, the idea of combining them into one Mexican pizza recipe was instantly appealing. This Mexican pizza recipe features creamy refried beans, spicy jalapeño, and sweet corn. The perfect dish for when you can’t decide between Italian and Mexican food!

Ingredients:

  • 4 Food Processor Dough or Thin Crust Dough)
  • 2 cup canned refried black beans (
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cayenne
  • 2 small green onion
  • 2 tomato
  • 2 jalapeño pepper 
  • 4 handfuls frozen corn
  • Mexican cheese blend (or a mix of Monterrey jack and cheddar)
  • Kosher salt
  • Fresh cilantro
  • Sour cream or Mexican Crema, to serve 
  • Pickled onions, to serve

Method to Prepare:

  • Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven.
  • In a medium bowl, mix the refried black beans with a bit of water to thin the consistency so that it is easily spreadable. 
  • Mix with ½ teaspoon cumin, ¼ teaspoon paprika, and ¼ teaspoon cayenne.
  • Seed and dice the tomato. Thinly slice the green onion. Seed and dice the jalapeño; or if you prefer, thinly slice it. Chop the cilantro.
  • When the oven is ready, dust a pizza peel with cornmeal or semolina flour. 
  • Stretch the dough into a circle. Then gently place the dough onto the pizza peel. 
  • Quickly assemble the pizza. 
  • Spread the bean mixture in a thin layer over the dough, sprinkle on as much cheese as you like, and add the red onion, tomato, jalapeño, corn, and cilantro. 
  • Sprinkle with kosher salt.
  • Transfer the pizza to the pizza stone using the pizza peel, and bake until the cheese and crust are nicely browned about 5 to 7 minutes. 
  • Repeat Steps 4 through 6 for the second pizza. Chop the cilantro and add it as a garnish. Add sour cream and pickled onions, if desired.

Fruit and Nut Cake

  • 225 g All-purpose flour
  • 240 ml Curd/yogurt / Thick buttermilk (at room temperature)
  • 170 g Brown sugar (You may use white sugar also)
  • 150 g Softened Butter
  • ¼ tsp Salt
  • ½ tsp Ground cinnamon
  • ¼ tsp Ground nutmeg
  • 1 tsp Baking soda
  • ½ tsp Vanilla extract/Vanilla bean paste
  • ½ cup Raisins
  • ½ cup Cranberries
  • ½ cup Walnuts
  • ½ cup Dries plums/Prunes
  • ⅓ cup Candied orange peels

Method to Prepare:

  • In a mixing bowl, mix together flour, baking soda, salt, ground spices and whisk them together to make sure everything is evenly distributed in the flour. 
  • Then add the dried fruits and nuts and mix them together and keep them aside.
  • In another bowl, mix together softened butter, brown sugar, vanilla extract, and then the buttermilk and mix them very well.
  • Mix together, the wet and dry ingredients together.
  • Immediately pour into the greased pan, smoothing the top with a spatula.
  • Bake in the preheated oven for about 60 to 70 minutes(@350 Degree F), or until the cake is golden brown. A toothpick inserted into the center of the cake will come out clean. 
  • This cake gets browned too fast. So, keep an eye on it. 
  • Remove from the oven and let them cool for 10 minutes before removing from the pan.
  • Your Buttermilk Fruit Cake is ready.

Friendship Day Recipes For Non-Veg Lovers

The Seoul Sling

The chilled ‘grapefruitade’ they serve there kept us going. That’s basically just fresh pink grapefruit juice and soda but it worked even better with a spritz of tonic and adding a nip of gin. This recipe makes enough for ten 160ml!

Ingredients:

  • 1L (4 cups) grapefruit juice 
  • 300ml Tanqueray London Dry Gin
  • 300ml tonic, chilled
  • 1 grapefruit, cut into thin wedges
  • 10 springs of thyme, lemon thyme, or Thai basil for garnish,
  • Loads of crushed ice

Method to Prepare:

  • Pour your grapefruit juice into a large (2lt) jug. Place jug, gin, and tonic in the fridge to chill until the guests arrive. 
  • If there is space in the freezer place your highball glasses in there to chill. Alternatively, fill the glasses with ice before your guests arrive.
  • To serve, add the gin and the tonic into the jug.
  • Take the chilled glasses, draining them of any melted ice if required, and refill with ice. 
  • Pour over the Seoul Sling.
  • Garnish with an elegant slice of grapefruit and your herb of choice. 
  • Spank the herb and twist the wedge gently over the glass first to release their aromas.

Spicy Italian Chicken Pasta

Spicy Italian Chicken pasta made with shredded chicken, fresh tomato puree, onion, garlic, veggies, Italian flavors, simple sauces & linguine pasta. Garnish the pasta with Sriracha sauce & freshly grated Parmesan cheese.

Ingredients:

  • 2 tsp olive oil
  • 1 tsp garlic, finely chopped
  • 1 small onion, finely chopped
  • 1 cup fresh tomato puree, blend 4 tomatoes and make a puree
  • ½ tsp red pepper flakes
  • 1 tsp Italian seasoning
  • ½ tsp black pepper powder
  • Salt to taste
  • 1 tsp soy sauce
  • 1 ½ tsp sriracha or use chili sauce
  • 1 tsp vinegar
  • ¼ cup green bell pepper, chopped
  • ¼ cup cabbage, chopped
  • 150 gram shredded chicken
  • ½ cup water (reserved pasta water)
  • 200- gram Linguine pasta
  • Sriracha
  • Parmesan cheese 

Method to Prepare:

  • Make fresh tomato puree by blending 4 tomatoes in a blender jar. Set it aside.
  • Cook linguine pasta as per the instructions given on the package. Reserve some pasta water. 
  • Drain the pasta in a colander. Add 1 teaspoon oil over it & toss. Set it aside.
  • Chop onion & garlic. Set it aside.
  • Keep all the sauces & flavoring ready.
  • Heat a heavy bottom pan & add 1 tsp oil over medium heat.
  • Add garlic & onions. Stir-fry until onions are translucent
  • Next, add tomato puree. Cook for 3-4 minutes on medium heat.
  • Add red pepper flakes, Italian seasoning, black pepper powder, salt, soy sauce, Sriracha & vinegar. 
  • Cook for 2 minutes.
  • Now add green bell pepper, cabbage & shredded chicken. Mix it well. Cook for 3-4 minutes.
  • Taste & adjust the seasoning.
  • Add ½ cup water (reserved pasta water) & mix.
  • Add cooked linguine pasta. Toss everything well.
  • Spicy Italian Chicken Pasta is ready to serve.
  • Top it with Sriracha & freshly grated parmesan cheese.

Ingredients:

  • 1 cup light brown sugar
  • ½ cup water
  • ½ cup ketchup
  • ½ cup light corn syrup
  • ½ cup minced onion
  • 4 tablespoons red wine vinegar
  • 2 teaspoon minced garlic
  • 2 teaspoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon ground allspice
  • 3 tablespoons light brown sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground allspice
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • olive oil
  • 4 chicken breasts, pounded thin
  • 2 red bell pepper
  • 2 yellow bell pepper
  • 2-pound pizza dough
  • 4-6 cups shredded mozzarelle cheese
  • 8 slices bacon, cooked
  • 1 cup thinly sliced onion, yellow or red
  • 2 green onion, sliced

Method to Prepare:

  • To make the sauce, combine all ingredients in a medium saucepan. Simmer for 6 to 8 minutes. Let cool and then puree in a blender. (Sauce can be made a day in advance.)
  • In a small bowl, combine all ingredients for jerk seasoning. Sprinkle chicken breasts with seasoning and drizzle with olive oil.
  • Grill chicken for 4 to 5 minutes per side, or cook in a pan over medium heat. Let cool and then thinly slice.
  • Roast both peppers by setting them directly over the flame of a gas burner. Turn every few minutes until all sides are charred. Plunge them into ice water and remove the skins. Slice into thin slices. Alternately, you can roast the peppers in a 450-degree oven for 45 minutes.
  • Divide dough in half. Making 1 pizza at a time, roll or stretch the dough into a 10-inch circle. Place on a lightly floured pizza pan or pizza peel.
  • Brush the dough with olive oil. Spread the desired amount of sauce on the dough. Sprinkle with 1 cup mozzarella cheese and half of all toppings. Sprinkle with a little more mozzarella cheese.
  • Slide pizza onto the pizza stone and bake until crust is golden about 9 to 10 minutes.

Ingredients:

  • 1 ½ cups espresso (or strong coffee), room temperature
  • 6 Tbsp golden rum divided
  • 40 ladyfingers (made from sponge cake batter)
  • 6 egg yolks (large)
  • ¾ cup granulated sugar
  • 16 oz mascarpone at room temp for 15 minutes
  • 2 cups heavy whipping cream cold
  • 2-3 Tbsp unsweetened cocoa powder to dust the top

Method to Prepare:

  • In a bowl, stir together 1 1/2 cups espresso and 3 Tbsp rum. 
  • Quickly dip half of the ladyfingers, one at a time, and arrange in a single layer in the bottom of a 9×13 casserole dish. 
  • Dip once on each side so they are moist but do not soak ladyfingers or the cake will collapse.
  • In a separate rimmed medium glass bowl, whisk together yolks and sugar. 
  • Place over steam and whisk 10 minutes on low heat until the mixture is lighter in color, slightly thickened, and not grainy when you rub between your fingers. 
  • Remove from heat and let cool slightly while doing step 3.
  • Beat together 16 oz mascarpone and 3 Tbsp rum. Use an electric hand mixer to beat in the warm yolk mixture until well incorporated.
  • In a separate bowl, beat cold heavy whipping cream until stiff peaks form (about 3-4 minutes). 
  • Use a spatula to gently fold half of the whipped cream into mascarpone cream then blend in the remaining whipped cream, just until incorporated. 
  • Do not overfold or it will become grainy.
  • Spread half of the cream over the first layer of ladyfingers. 
  • Dip and arrange remaining ladyfingers. Spread remaining cream. 
  • Refrigerate overnight. 
  • Dust with cocoa powder before serving. 
  • It is ok to dust with cocoa ahead of time – it will just darken it in color from the moisture.
