servings: 6 serves

Ingredients

  • One tablespoon of olive oil
  • One tablespoon butter
  • Four cloves of garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup sun-dried tomatoes
  • 1/2 teaspoon kosher salt plus more to taste
  • 6-8 cranks of freshly ground black pepper
  • 1 cup heavy cream
  • 18-20 ounces fresh cheese or spinach-filled tortellini
  • Two generous handfuls of fresh baby spinach roughly chopped
  • 1/4 cup freshly grated Parmesan cheese
  • juice of 1/2 lemon
  • 1-2 tablespoons fresh basil

Method to Prepare

  • Heat your large skillet over medium flame and add olive oil and butter.
  • Once the butter melts, add garlic and red pepper flakes. Cook garlic until it is fragrant, for about 30 seconds.
  • Now, pour the broth with sun-dried tomatoes, and sprinkle salt and pepper according to your taste. Give it a stir to combine and bring to a simmer.
  • Add the cream and then tortellini. After adding the tortellini, reduce the flame to medium-low and cover the skillet with a lid.
  • Cook it for around 5 minutes, and check the tortellini. If they’re not tender, cook again for approximately 30 to 60 seconds more.
  • Ensure that you do not cook it for too much longer; otherwise, the sauce will separate.
  • Once done, remove the lid and reduce the flame to low. Stir in spinach, parmesan, and lime juice.
  • Cook for about one minute until the spinach is wilt.
  • Taste the tortellini sauce and add salt and pepper, if needed.
  • Serve it immediately with parmesan or slivered basil, and enjoy!
