Ingredients 

For egg pasta:

  • 10.6 oz “00” (finely milled) flour
  • Three eggs

 For the filling:     

  • 10.6 oz Ricotta cheese
  • 12.3 oz Greens or chard greens
  • 3.5 oz grated Parmigiano Reggiano cheese
  • 1 Yolk
  • Salt-pepper to taste
  • Nutmeg to taste

For the dressing:       

  • 2.5 oz Butter
  • 2.1 oz grated Parmigiano Reggiano cheese

Method to Prepare 

  • First, take a large pot and boil water in it. 
  • Meanwhile, pour the flour onto the kneading board and create a well in the middle. Break eggs into it and knead until you get a smooth and even dough. 
  • Now, wrap it in cling film and keep it aside for 20 minutes resting. 
  • Clean the greens you are using and remove the stalks; only keep the leaves. 
  • Throw the leaves into the pot of saltwater and boil them. Once boiled, strain and wring the green perfectly. 
  • After that, finely chop the greens and add ricotta, one egg yolk, grated Parmigiano cheese, and mix them until you get a smooth and even mixture. 
  • Now, roll out the dough using a rolling pin. Ensure that it is not too thin. 
  • Take a toothed pasta wheel and make 5 cm squares. Fill the center of the square to prepare your ravioli. 
  • Now, fold the pasta sheet over the filling to create a rectangle. Carefully seal the pasta around the edges, so the filling doesn’t come out while cooking. 
  • Slide prepared ravioli in hot, salted water. Cook them. Ensure that you use plenty of water to cook your ravioli.
  • While removing and draining them, ensure that ravioli do not break.
