Ingredients 

For the Base:

  • 1½ cup whole milk 
  • ½ cup sugar 
  • 1/4 oz unflavored gelatin 1 packet,
  • ¼ cup cold water
  • 1 cup heavy whipping cream 
  • 2 teaspoons vanilla bean paste 

For the Roasted Strawberries:

  • 1 pound fresh strawberries, cut in half
  • 1 teaspoon vanilla bean paste 
  • ¼ cup sugar

Method to Prepare 

  • Take a medium saucepan and combine milk and sugar over medium-low flame. Stir frequently. 
  • Meanwhile, add gelatin evenly over the surface of the cold water and set it aside to hydrate.
  • Once the milk is hot, add the hydrated gelatine. Whisk until fully dissolved. 
  • Remove the saucepan from the flame and stir in heavy cream and vanilla bean. 
  • Divide the mixture into 6 oven-proof ramekins or small glasses. 
  • Slide them into the fridge and let them chill for at least 6 hours. 
  • Preheat the oven to 425F and take a large bowl. Add strawberries, sugar, and vanilla and toss them together. 
  • Now, transfer them to a baking sheet and spread them out in a single layer. 
  • Roast strawberries for about 20 to 25 minutes. Stir them halfway until the juices are bubbling. 
  • Take them out of the oven and let them cool and reach room temperature. 
  • Once cooled, top the panna cotta with these roasted strawberries and enjoy!
