  • Four egg yolks
  • 3 ½ tablespoons lemon juice
  • One pinch ground white pepper
  • ⅛ teaspoon Worcestershire sauce
  • One tablespoon water
  • 1 cup butter, melted
  • ¼ teaspoon salt
  • Eight eggs
  • One teaspoon distilled white vinegar
  • Eight strips of Canadian-style bacon
  • 4 English muffins, split
  • Two tablespoons butter softened

Method to Prepare 

  • First, we will make the hollandaise: we will use a double boiler part-way method. Fill the bottom with water. Ensure that water doesn’t touch the top pan. 
  • Now, bring water to a gentle simmer. Then, add egg yolks, lemon juice, white pepper, Worcestershire sauce, and one tablespoon of water to the top pan.
  • Add melted butter to the yolk mixture one tablespoon at a time while whisking constantly. 
  • If your hollandaise sauce is getting too thick, then add a tablespoon or two of hot water. Do Not stop whisking throughout the process until all butter is incorporated. 
  • Then, sprinkle salt and remove the pan from the heat. Cover it with a lid to keep the sauce warm. Meanwhile, preheat the oven to broiler settings.
