Ingredients: 

Mochi donut batter 

  • 1 cup all-purpose flour
  • One tablespoon cornstarch
  • ¾ cups glutinous rice flour
  • One teaspoon of baking powder
  • ½ cup granulated sugar
  • ½ cup silken tofu
  • One egg
  • Three tablespoons whole milk
  • 2 cups vegetable oil

Ube glaze 

  • ¼ cup powdered sugar sifted
  • ½ tablespoon milk
  • ½ teaspoon ube extract

Matcha glaze 

  • ½ cup white chocolate
  • ⅓ cup heavy cream
  • One tablespoon of matcha powder

Chocolate glaze

  • ¼ cup powdered sugar sifted
  • One tablespoon of cocoa powder
  • ½ tablespoon milk 

Method to Prepare: 

First, let’s make different types of glaze: 

To make Ube glaze 

  • Take a medium-sized bowl and add powdered sugar and ube extract to it. Then gradually add milk to make a smooth glaze. 

For Matcha Glaze 

  • For matcha glaze, take a small saucepan and heat heavy cream on a medium flame. 
  • Now, add chocolate and let it melt until you get a smooth texture.  
  • Then, whisk in the matcha powder to make a smooth gaze. 

For Chocolate Glaze

  • Take a medium-sized bowl and add powdered sugar and cocoa powder to it. 
  • Then slowly pour milk a little at a time to make a smooth glaze. 

Now, for donut: 

  • Take a large bowl and add all-purpose flour, cornstarch, glutinous rice flour, baking powder, and sugar. 
  • Take another bowl and carefully press the silken tofu through a fine-mesh sieve. 
  • Now, slowly whisk in the egg and milk into the tofu mixture.
  • With the help of a spatula, mix the tofu mixture with the flour mixture and form a rough dough. 
  • Knead it for around 3 minutes until it becomes smooth. 
  • With the help of a kitchen scale, weigh in 8 grams of dough and place it on a silicone mat. 
  • Once they are considered, form small balls from the dough. 
  • Take a piece of parchment paper and place eight balls in it. Give them a donut shape. 
  • Repeat the same process until all the balls are placed on the parchment paper.
  • Now, take a heavy-bottomed pan and heat the oil in it. 
  • Fry the donuts along with the parchment paper for almost a minute until it’s light brown.  
  • After frying, turn the donuts and slowly remove the parchment paper. 
  • Continue frying for another 30 seconds to 1 minute.
  • With the help of a tong, transfer the donuts to a plate lined with paper towels and repeat the frying process for the remaining donuts.
