Ingredients: 

  • 40 grams Cake flour
  • 35 grams Butter
  • 30 grams Whole milk
  • 30 grams White granulated sugar
  • 2 Eggs
  • ¼ teaspoon Vanilla extract
  • ¼ teaspoon Cream of tartar

Method to Prepare: 

  • Japanese desserts depend on preciseness, so measure all the ingredients in separate small bowls for preparation.
  • Now, take a bowl and crack the eggs, and gently separate egg yolks and egg whites.
  • Take a small pan and heat butter with milk. Do not boil the mixture. It would be warm to touch.
  • Take another bowl and add cake flour to it. 
  • Now, pour the warm milk mixture in it and slowly whisk it. 
  • Whisk it until you get a pretty sticky and viscous batter. 
  • Then, add the egg yolks and vanilla extract into the bowl and whisk until well mixed. 
  • Now, the meringue part. 
  • Take a bowl and add cream of tartar, egg whites, and sugar. Beat them at high speed using a hand mixer until it is fluffy and creamy.  
  • Now, pour the egg yolk batter into the fluffy meringue bowl. With the help of a spatula, gently combine both of them. Mix until you see no lumps in the batter. 
  • Take a 6-inches mold and place the baking paper inside it, covering all sides inside the mold, including its bottom.
  • Now, slowly pour the batter into the mold. 
  • When finished, knock the mold several times on the platform to eliminate the big air bubbles. 
  • You will need to use the hot bath baking technique to bake this cake. 
  • First, prepare the hot bath and preheat your oven at 150c. 
  • Now, place your mold in the middle of the hot bath and bake it for 60 minutes.
  • After 60 minutes, carefully take the hot bath out of the oven. 
  • Then, bake the cake for around 10 minutes more to dehydrate your cake a bit.
  • Take your fluffy and jiggly cake out. 
  • Remove it from the mold and baking paper immediately. Rest it well.
  • Let’s eat!! You can eat it as it is warm or cold.
