One of the most popular dishes of India, Chole Masala is one of the tastiest and flavorsome recipes in the country! Chole Masala

Ingredients: 

To pressure cooker:

  • 2 cups + 2 tablespoon raw chickpeas 
  • 5 to 6 green cardamom pods
  • 4 to 5 black peppercorn 
  • 2 bay leaves
  • 3 cinnamon sticks
  • 2 tea bags
  • Salt, as per needed
  • 5 cup of water

For the Chole masala:

  • 1 tablespoon of oil
  • 3 to 4 cloves
  • 2 small onion, pureed 
  • 2 teaspoon of ginger-garlic paste
  • 4 medium tomatoes, pureed
  • 3 teaspoons of Chole masala
  • ½ teaspoon of red chili powder
  • ½ teaspoon of paprika powder
  • ¾ teaspoon of cumin powder
  • Salt, as per taste
  • 1 tablespoon of ghee
  • ¼ teaspoon of garam masala
  • 2 tablespoon of coriander

Method to Prepare:

  • Soak the chickpeas overnight and drain the water in the morning and take a pressure cooker.
  • Add these chickpeas, 2 tea bags, bay leaves, cardamom, cinnamon stick, salt, and 4 to 5 cups water. 
  • Pressure cook it on high flame until 1 or 2 whistles. After that let the chickpeas cook them for another 10 to 12 minutes on low flame.
  • Take a deep skillet and heat 1 tablespoon of oil and add onion and cloves into it. Fry the onions until the raw smell goes away and they become golden brown.
  • Add ginger and garlic paste and cook it for another 3 to 5 minutes, until the smell goes away. 
  • Now, let’s make gravy. Add tomato puree and stir and let it cook it for 12 to 15 minutes on a low-medium flame and cover the pan to prevent the splash. 
  • Let’s add the spices and make this Chole delicious and flavorful; add Chole masala, red chili powder, paprika powder, salt, and mix them for 1 to 2 minutes.
  • It is time to add chickpeas now! Add those chickpeas and stir well so they are coated in the spices, for around 2 minutes.
  • Add the water we used for boiling chickpeas, cover the pan, and let them simmer for 30 minutes. Keep check of the water as the gravy will get thick in 30 minutes and add water if you feel so.
  • Heat 1 tablespoon of ghee in a pan and add the ginger to it.
  • Fry till the ginger turns golden brown but keeps in check that you don’t burn them. Add this mixture in the Chole and turn off the stove.
  • Sprinkle some garam masala if you love spicy food. Throw some chopped coriander as you want your Chole to look beautiful!

Ingredients:

  • 2 cups of maida (all-purpose flour)
  • 1 teaspoon of sugar
  • 1 teaspoon of baking powder
  • ¼ teaspoon of baking soda
  • ½ teaspoon of salt
  • 2 teaspoon of oil
  • ¼ cup of curd
  • ¾ cup of water, to knead the dough
  • 4 teaspoon of black sesame seeds
  • ¼ cup of coriander leaves
  • 2 tablespoons of butter, to brush Kulche

Method to Prepare:

  • Take a large mixing bowl and take 2 cups of maida, 1 teaspoon of sugar and baking powder, ¼ teaspoon of baking soda, ½ teaspoon of salt, and 2 teaspoons of oil. Add the curd and mix it well.
  • Then add ¾ cup of water and start kneading. You can add water as required.
  • Knead a smooth and soft dough and add more water if you think the dough seems dry.
  • It is time to let it rest for 2 hours or more. Cover it with a cloth.
  • After 2 hours, pinch the ball-sized dough and flatten.
  • Add some sesame seeds and coriander to give this Kulche a traditional look.
  • With the help of a rolling pin, give your dough an oval shape and then brush water on your Kulche.
  • Now, slowly flip the Kulche and put it on a hot pat. 
  • After just a minute, turn the pan upside down and cook the Kulche directly on the flame until it becomes golden brown and puffs.
  • Gently and carefully scrap Kulche from the bottom and remove it.
  • Brush some butter and serve this simplistic Kulche along with the Chole you prepared earlier.

Ingredients: 

  • 2 tablespoon of oil
  • 2 cinnamon stick
  • 4 brown cardamoms
  • 8 to 10 black peppercorns
  • 8 cloves
  • 2 onions, chopped
  • 50gm garlic and ginger, chopped
  • 3 to 4 green chilies, chopped
  • 2 tablespoons of cumin and coriander seeds, ground
  • ½ teaspoon of turmeric and red chili powder
  • ½ teaspoon of asafetida powder (heeng) 
  • 5 potatoes, boiled and chopped
  • 3 carrots, chopped
  • 100gms of green beans and cauliflower, chopped
  • Salt, to taste
  • 200gms curd
  • 2 ½ cup of Basmati rice
  • 6 cups of vegetable stock
  • 50 ml of ghee
  • 1 bunch of fresh coriander
  • 1 lime

Method to Prepare:

  • Take a heavy-bottom pan and heat oil into it. 
  • Now, add in the cinnamon sticks, bay leaves, brown cardamom, green cardamom, peppercorn, cloves, onions, garlic, ginger and green chilly. Stir it for 2-3 minutes.
  • After that, add ground cumin and coriander seeds, turmeric powder, red chili powder, asafetida, water, and cook it for 5 to 7 minutes.
  • Into this masala base, add potatoes, carrots, green beans, and cauliflower.
  • Add salt as per your taste and cover it with a lid.
  • Let it simmer for 15 minutes until the vegetables are 70% cooked. 
  • Open the lid and add in the curd and stir well. 
  • The next step is to add the prewashed Basmati rice into it and stir it well until it is perfectly coated with the base.
  • Now, add in the vegetable stock and let it simmer over a low flame until rice is cooked.
  • Get it into a serving bowl and garnish it with coriander leaves, a drizzle of ghee, and a squeeze of lime!
  • Serve hot!

Ingredients:

For Jamun:

  • ¾ cup (100 grams) milk powder, unsweetened
  • ½ cup (60 grams) maida / plain flour
  • ½ tsp baking powder
  • 2 tbsp ghee / clarified butter
  • milk (for kneading)
  • ghee or oil (for frying)

For sugar syrup:

  • 2 cup sugar
  • 2 cup water
  • 2 cardamom
  • 1 tsp lemon juice
  • 1 tsp rose water

Method to Prepare:

  • Firstly, take a large bowl and add ¾ cup milk powder, ½ cup maida and ½ tsp baking powder.
  • Give it a good mix, and your gulab jamun mix is ready.
  • Add 2 tbsp of ghee and mix well again to moisten the flour.
  • Add milk as required as the flour start to combine.
  • Combine everything well before forming a soft dough. Do not knead the dough.
  • Cover and let it rest for 10 minutes.
  • Meanwhile, prepare the sugar syrup by adding 2 cups of sugar, 2 cups of water, and 2 cardamoms in a pan.
  • Give it a good mix and boil for about 5 minutes until the syrup turns sticky. Do not attain any string consistency.
  • Turn off the flame and add 1 tsp of lime juice and 1 tsp of rose water. Lemon juice is added to prevent sugar syrup from crystallizing.
  • Cover the syrup and keep it aside.
  • After 10 minutes, take the dough and prepare small ball-sized jamuns.
  • Ensure that jamuns have no cracks. If there are cracks, then there are high chances for jamuns to break while frying.
  • Deep fry the prepared jamuns in hot oil or ghee.
  • Stir continuously and fry on low flame until they are golden brown.
  • Drain off the jamuns and transfer them into a hot sugar syrup.
  • Cover and rest for 2 hours or until jamuns absorb the sugar syrup and double in size.
  • Finally, your gulab jamuns are ready!
  • Serve and enjoy!
