Ingredients 

  • 2 boiled eggs 
  • 1 normal egg 
  • 1 tomato, chopped 
  • half cup ginger, chopped 
  • half cup garlic, chopped 
  • 1 onion, chopped 
  • 2 green chillis, chopped 
  • 1 cup chopped coriander 
  • A small bowl of dhaniya jeera powder
  • A small bowl of red chilli powder 
  • Salt as per taste 
  • A small bowl of black pepper powder 
  • Toasted bread slices for serving 

Method to Prepare 

  • Take a pan and add oil to it. 
    • Now, add chopped green chillies, onions, ginger, and garlic. 
    • Cook until onions are translucent. 
    • Then, add salt, red chilli powder, black pepper powder, and dhaniya-jeera powder. 
    • Then, add chopped tomatoes. 
    • Mix well. Tomatoes will prevent masalas from burning. 
    • Now, chop boiled eggs and add them to the pan. 
    • Mix well to coat and sprinkle coriander leaves. 
  • Keep it aside. 
  • Now, take a non-stick pan and spread the oil. 
    • Crack one egg to make a half-fry. 
    • Sprinkle black pepper powder and salt over the sunny side up. 
    • Cook it for a couple of minutes. 
  • Now, add boiled bhurji to a plate. 
  • Put egg half-fry over it. 
  • Serve with toasted bread, and enjoy!
