Ingredients 

For Rose Petal Feuilletine:

  • 200 gm butter
  • 200 gm sugar
  • 66 gm egg white
  • 200 gm flour
  • 20 gm rose petal powder

For Berry Baked Yogurt:

  • 800 gm yogurt
  • 700 gm double cream
  • 800 gm condensed milk
  • 100 gm berry puree
  • 50 gm fresh berry slice
  • 1 nos vanilla pod

For Raspberry Foam:

  • 200 gm raspberry puree
  • 300 gm water
  • 150 gm sugar
  • 3 gm lecithin

For Vanilla Marshmallow:

  • 360 gm confectioners sugar (powdered sugar)
  • 100 gm water
  • 20 gm silver gelatine sheet
  • 1 nos vanilla pod

For Crunchy Chocolate Pudding:

  • 500 gm milk chocolate
  • 300 gm cocoa butter
  • 400 gm almond crunch, roasted

Method to Prepare 

Rose Petal Feuilletine:

  • Take a small bowl and cream butter and sugar, and gradually, add egg white. Make a smooth paste. 
  • Now, add flour and rose petal powder and give it a good mix. Spread the paste on parchment paper and slide the bake it for around 6 minutes at 180 degrees C. 

Berry Baked Yogurt:

  • Now, boil the berry puree with sliced berries and vanilla pod. Squeeze the seeds out of the pod and mix with the puree. 
  • Take off boiled puree from the flame and let it cool. 
  • Now, take another bowl and mix yogurt, condensed milk, and cream to make a smooth batter. 
  • Pour in the berry mixture and give it a good mix. 
  • Laminate a baking tray and pour this batter into it. Bake it for 20 to 25 minutes at 160 degrees C. 
  • Let it cool then slide it into the refrigerator overnight to set. 

Prepare Raspberry Foam:

  • Now, let’s make foam. Warm the berry puree with water and add sugar and pectin into the puree.
  • Beat the mixture using a hand blender to make berry foam. Get the foam from the top and keep it aside. We will use it for platting. 

Prepare Vanilla Marshmallow:

  • Now, let’s make a vanilla marshmallow. First, take a small bowl and soak the gelatine in iced water and keep it aside.
  • Now, boil the water with the vanilla pod, discard the seeds. 
  • Then, add the soaked and drained gelatine into the boiled water and mix it well. 
  • Add some confectioners’ sugar to a bowl and pour the gelatine mixture into it. 
  • Beat it until you get a soft peak. 
  • Take the soft peak out of the mixing bowl and let it cool. 
  • Make small pieces out of it and coat them with crunchy chocolate. You can use it for plating. 

Prepare Crunchy Chocolate Coating:

  • Melt the chocolate and cocoa butter and incorporate them properly. 
  • Add the almond crunch and coat the marshmallows with it.
