Ingredients 

  • One broken-down roasting chicken
  • Two tablespoons of unsalted butter
  • 2 cups peeled yellow pearl onions
  • 1 pound quartered button mushrooms
  • Two finely minced cloves of garlic
  • juice of ½ lemon
  • Three tablespoons of all-purpose flour
  • ½ cup chardonnay or other dry white wine
  • 3 cups chicken stock
  • One bay leaf
  • Three parsley sprigs
  • Three thyme sprigs
  • 2/3 cup heavy whipping cream
  • sea salt and fresh cracked pepper to taste

Method to Prepare

  • Put chicken on a plate and season all the sides with salt and pepper. 
  • Now, heat butter in a large cast-iron skillet over medium-high flame. 
  • Add chicken skin-side down in the skillet and cook for about 4 minutes per side, until browned. 
  • Once it is ready, remove the chicken and set it aside. 
  • Then, add onions and mushrooms to the pan and sauté them over low flame for about 5 minutes. Frequently stir them to prevent burning. 
  • Add garlic and cook for one more minute and then squeeze lemon. 
  • Now, add flour and stir until thoroughly mixed. 
  • Then, pour wine, stir until combined, and add the stock. 
  • Cook everything for around 4 minutes on medium flame until it becomes a thick gravy.
