Ingredients 

  • 300g shortcrust pastry
  • plain flour for dusting
  • Four rashers back bacon, fat trimmed, chopped
  • oil, for frying
  • 100g gruyère cheese , grated
  • Two medium eggs
  • 125ml double cream
  • 18-20 mini tartlet tins

Method to Prepare 

  • First of all, roll the pastry out onto a floured work surface until very thin. Cut out pastry circles. 
  • Now, line the tins with the pastry circles. Press the edges and up the sides. 
  • Slide those tins into the fridge and let them chill for around half an hour. 
  • Meanwhile, heat the oven to 200C. Line each pastry case with a piece of foil or uncooked rice. 
  • Now, bake for at least 10 minutes, lift the foil and uncooked rice and bake for another 5 minutes. 
  • Meanwhile, fry the bacon until a little crisp to prepare your filling. 
  • Now, divide bacon and half the cheese between the cases. 
  • Take a bowl, beat the eggs and cream together, and pour over the bacon and cheese until the cases are almost full. 
  • Sprinkle the remaining cheese and bake for another 25 minutes. Bake them until golden and puffed up.
