Now, with all the information about ingredients at your disposal, it is time for you to create this delicious Five-star delicacy at your home using everyday ingredients. However, ensure that you follow all the below-mentioned steps.

Notes You Must Follow:-

  • Do Not skip the olive oil. Substituting it with any vegetable or cooking oil will remove that unique olive taste from the recipe. Additionally, vegetable oil will make this dish a bland one! This is how it is made in Italy, and you should follow the same to get the authentic taste.
  • First, add salt to the boiling water, and then add spaghetti. Additionally, you should never cook spaghetti in lukewarm or cold water. Ensure that the water is hot and boiling.
  • If you are making the traditional version of this recipe, do not top it off with cheese.
  • While cooking, make sure you don’t burn the garlic. Burning the garlic will give your spaghetti a bitter taste.
  • We will be making our pasta. So, you will need four large eggs. Ensure that eggs are large because you will want your dough to be moist. If you are using small eggs, increase the number of eggs to five.
  • After you add salt, always taste the boiling water. It should taste like broth and not like saltwater.
  • While cooking, use a large pot to give enough room for spaghetti to be moved around. Also, keep stirring it to prevent spaghetti from sticking with each other and ensure perfect cooking.

Servings: 4 serves

 Ingredients

For Homemade Pasta (without a machine)

  • 3 cups of all-purpose flour
  • Four large or five small eggs

Other ingredients

  • Salt
  • Three whole pepperoncini (small red chiles)
  • ⅔ cup extra virgin olive oil
  • Four garlic cloves, thinly sliced
  • ¼ cup chopped Italian parsley

Method to Prepare

  • First, we will make spaghetti at home without using a machine.
  • Clear a large surface and place flour in a mound on that.
  • Now, crack four big eggs into the center of the mound of flour. Create a well so it can hold the eggs properly.
  • Gently bring the flour into the center of the well with your fingertips.
  • Start incorporating the flour into the eggs until the flour is absorbed. It will be a little messy but a worthy process.
  • Bring it together once the dough starts to form, and knead it into a smooth, yellow dough with your palms.
  • If you think your dough is a little dry, add a little Splash of water. It will take around 5 minutes to knead the dough.
  • Cover the dough ball with cling wrap and slide it into the fridge for at least half an hour.
  • It will allow the dough to develop gluten. Ensure that you don’t let it rest for more than 18 hours.
  • After resting, remove it from the fridge and cut four equal parts. Cover the dough balls with a towel to prevent them from drying out.
  • Meanwhile, use flour and dust on your work surface and rolling pin.
  • Take one dough ball at a time and roll it into a large thin sheet. Roll it as thin as possible, like paper-thin.
  • Once the dough has been rolled out, fold it over itself a few times. Then, cut the pasta roll into strips according to the pasta you are making. Your homemade pasta is ready!
  • Set your pasta aside and let them rest.

  • Meanwhile, remove the stems of the pepperoncini and halve them lengthwise.
  • Now, take a large pan and add oil, pepperoncini, and garlic.
  • Cook it on a medium-high flame until the garlic becomes translucent for around 3 minutes.
  • Now, add parsley to the pan, and switch off the flame.
  • Meanwhile, take your pasta and cook them until they are al dente. Ensure they’re not well done but nearly done. Drain them and save one cup of pasta water.
  • When the oil in the pan cools off a little, add ½ cup of pasta water and reduce the flame to medium.
  • Then, add the pasta and stir them vigorously while cooking them.
  • Finally, add the reserve water to finish the cooking. You will get a thickened sauce.
