Ingredients 

For dough:

  • 2 cups maida/plain flour
  • ¼ tsp ajwain/carom seeds
  • ½ tsp salt
  • ¼ cup oil
  • ½ cup water

For stuffing:

  • 2 tsp oil
  • 1 tsp cumin/jeera
  • ½ tsp coriander seeds (crushed)
  • ½ tsp fennel / saunf
  • pinch hing / asafoetida
  • 1-inch ginger (finely chopped)
  • One chilli (finely chopped)
  • ½ cup peas / matar
  • ½ tsp Kashmiri red chilli powder
  • ½ tsp coriander powder
  • ¼ tsp cumin powder/jeera powder
  • ½ tsp amchur / dry mango powder
  • ½ tsp garam masala
  • ¼ tsp pepper (crushed)
  • ¾ tsp salt
  • 4 potato/aloo (boiled & mashed)
  • Five cashew / Kaju (chopped)
  • 2 tbsp raisins / kishmish
  • 2 tbsp coriander (finely chopped)

Other ingredients:

  • water (for sealing)
  • oil (for deep frying)

Method to Prepare 

  • Add all the ingredients listed under the dough section in a medium bowl. Knead a soft dough and then let it rest for a few minutes. 
  • Meanwhile, let’s prepare the filling. 
  • Add all the ingredients listed under the stuffing section in a medium-sized bowl. Mix everything. Keep it aside, and let’s prepare the crust. 
  • After 5 to 10 minutes, pinch a ball-sized dough and grease it with oil. 
  • Then, roll the dough into an oval shape. Cut it horizontally and divide it into two equal portions with a knife. 
  • Meanwhile, add oil to a deep skillet and heat it over low-medium heat. 
  • Grease one slice with water and make a cone.
  • Now, stuff the prepared cone with at least two tablespoons of samosa filling. 
  • Grease little water on the edges, close and seal it tightly by pressing firmly. 
  • Add your prepared samosa into the deep skillet and fry them on low heat. If using an oven, bake them at 180 degrees for 40 minutes. 
  • Stir the samosas frequently, and fry them for at least 15 minutes on low flame. 
  • Once the samosas are golden and crispy, remove them on a paper towel to drain excess oil.
