- 2 cups maida/plain flour
- ¼ tsp ajwain/carom seeds
- ½ tsp salt
- ¼ cup oil
- ½ cup water
- 2 tsp oil
- 1 tsp cumin/jeera
- ½ tsp coriander seeds (crushed)
- ½ tsp fennel / saunf
- pinch hing / asafoetida
- 1-inch ginger (finely chopped)
- One chilli (finely chopped)
- ½ cup peas / matar
- ½ tsp Kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder/jeera powder
- ½ tsp amchur / dry mango powder
- ½ tsp garam masala
- ¼ tsp pepper (crushed)
- ¾ tsp salt
- 4 potato/aloo (boiled & mashed)
- Five cashew / Kaju (chopped)
- 2 tbsp raisins / kishmish
- 2 tbsp coriander (finely chopped)
- water (for sealing)
- oil (for deep frying)
Method to Prepare
- Add all the ingredients listed under the dough section in a medium bowl. Knead a soft dough and then let it rest for a few minutes.
- Meanwhile, let’s prepare the filling.
- Add all the ingredients listed under the stuffing section in a medium-sized bowl. Mix everything. Keep it aside, and let’s prepare the crust.
- After 5 to 10 minutes, pinch a ball-sized dough and grease it with oil.
- Then, roll the dough into an oval shape. Cut it horizontally and divide it into two equal portions with a knife.
- Meanwhile, add oil to a deep skillet and heat it over low-medium heat.
- Grease one slice with water and make a cone.
- Now, stuff the prepared cone with at least two tablespoons of samosa filling.
- Grease little water on the edges, close and seal it tightly by pressing firmly.
- Add your prepared samosa into the deep skillet and fry them on low heat. If using an oven, bake them at 180 degrees for 40 minutes.
- Stir the samosas frequently, and fry them for at least 15 minutes on low flame.
- Once the samosas are golden and crispy, remove them on a paper towel to drain excess oil.
