Ingredients 

  • One clove shallot
  • One clove garlic
  • One red chili, seeded
  • 1/2 teaspoon toasted belacan, terasi
  • 1/2 teaspoon palm sugar
  • 1/2 tablespoon kecap manis
  • Eight oz. (226 g) overnight rice
  • One fried egg, well done
  • Two tablespoons oil

Method to Prepare 

  • If you can, use leftover rice. Break the rice with the help of the back of a spoon to avoid clumping. 
  • Now, take a wok and toast the belacan on low flame until it becomes dry and leaves an aroma. This toasted belacan will be somewhat powdery and look like granules. 
  • Fry an egg (well-done) and set it aside.
  • Blend shallot, garlic, red chili, and toasted belacan in a mini food processor. You can also use mortar and pestle to blend these ingredients for authentic and earthy taste.
