Ingredients 

  • 2 and 2/3 cup urad dal
  • 2 and 2/3 teaspoon peppercorns
  • 2 and 2/3 cup refined oil
  • Four cloves garlic
  • 1 and 1/4 dashes asafoetida (Hing)
  • 2/3 cup onion
  • 1 and 1/4 handful curry leaves
  • 1 and 1/3 teaspoon ginger
  • salt As required
  • water As required

Method to Prepare 

  • To begin the process, soak black gram (urad dal) in water and let it soak for around an hour. 
  • After an hour, drain the water, grind dal, and turn it into a thick paste/batter. 
  • Avoid adding too much water; just sprinkle a little bit of water to get half grind consistency of the batter. 
  • Then, add cumin seeds, peppercorns, ginger, garlic, salt, and hing. Grind it once again. 
  • Add some finely chopped green chilis and grind the batter if you love spicy flavors. 
  • Now, take a big bowl and add the batter to it. Throw in chopped onions, and curry leaves in the batter and give it a good mix. 
  • While preparing the batter, heat oil in a deep fry pan on medium flame. 
  • Now, apply a few drops of oil to your palm and form vadas using the batter. Make a small hole in the center using your finger. 
  • Carefully drop the vadas in the hot oil for frying. 
  • Increase the heat and fry them well until they are golden brown. 
  • Serve these medu vadas with Sambar and coconut chutney along with fried green chilis.
