Dalwadas are crispy from the outside and soft and fluffy from the inside. Additionally, this Gujarati dalwada is very easy to make at home. You will require only a handful of ingredients to make these crispy, crusted fritters.

Ingredients 

  • ½ cup green moong dal
  • ½ cup yellow moong dal
  • ¼ cup chana dal
  • ¼ cup urad dal
  • 6-7 green chili
  • 1-inch ginger
  • Salt to taste
  • Pinch of hing
  • 1 tbsp crushed black pepper
  • ½ cup coriander leaves
  • ¼ tsp baking soda
  • Oil for deep frying

Method to Prepare 

  • Take a big bowl and wash, soak green and yellow mung dal, chana dal, and urad dal. Let it soak for at least 4-5 hours.
  • After 5 hours, remove the soaked dal and add them to the mixer jar along with green chilis and ginger. Add a little water to make a coarse paste.
  • Take this paste out into a bowl and continuously stir it in one direction. 
  • Meanwhile, add oil to a deep bottomed pan and heat it over low-medium flame. 
  • After a few minutes of constant stirring, you will see the paste is getting light and fluffy. 
  • Add salt, asafetida (hing), crushed black pepper, and coriander leaves into the batter. Give it a good mix. 
  • Lastly, add baking soda and some hot oil from the pan into the batter and mix well. 
  • One by one, fry wada into the hot oil. Make sure you fry wada on medium heat and fry them until they are crispy and golden brown.
  • Serve them hot with green chutney or tamarind (Imli) chutney, fried chilis, and sliced onions. 
  • Enjoy them hot!
