Ingredients 

For the cookie:

  • Three large egg whites at room temperature 
  • 1 1/2 cups almond flour 
  • 1/2 cup granulated sugar  
  • 1 cup powdered sugar 
  • 1 tsp vanilla 5mL
  • 1/4 tsp cream of tartar

For the buttercream

  • 1 cup unsalted butter softened 
  • Five egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • 3 tbsp water
  • One pinch salt

Method to Prepare 

For the Macarons:

  • Take a bowl and incorporate the confectioner’s sugar and almond flour well.
  • Now, add the egg whites kept at room temperature into another clean bowl. 
  • Whisk the egg whites using an electric mixer. 
  • Once you see foam, add the cream of tartar, and Slowly add granulated sugar. 
  • Add your favorite food color (if desired) and vanilla. Beat until the stiff peaks form. 
  • Take ⅓ of the dry ingredients and add them to the egg whites. 
  • Be careful while adding the remaining dry ingredients. Be as gentle as possible while folding these ingredients. 
  • The final mixture will look like flowing lava. 
  • Spoon this mixture into a popping bag with a medium round tip and prepare for pipping. 
  • Line a baking sheet with parchment paper and pipe around one-inch dollops of this batter. 
  • Tap the baking sheet on the counter several times. It will release any air bubbles from the dollops.
  • Let them sit at room temperature for about 40 minutes before sliding them into the oven. 
  • Bake them for about 15 minutes at 300F. Don’t forget to rotate the tray after 7 minutes. 
  • Get the sheet out of the oven and let them cool completely before removing it from the baking sheet. 

For the French Buttercream Filling:

  • Take a medium saucepan and add sugar and water. 
  • Heat it over low flame while stirring until sugar completely dissolves. Increase the flame to medium-high and bring it to a boil. 
  • Add egg yolks to a stand mixer and whisk them until thick foamy. Keep the mixer running. 
  • Cook the sugar and water until it reaches 240 degrees F. Once the temperature is reached, remove the saucepan immediately from the flame. 
  • Slowly drizzle the hot sugar syrup into the bowl of yolk, where the mixer is constantly running. 
  • Keep mixing until the bottom of the bowl is cool enough to touch, and let the yolk and sugar syrup mixture be cooled to room temperature.
  • Now, add butter one cube at a time, allowing each piece to incorporate before adding the next one. 
  • Add vanilla extract and salt and continue mixing until the mixture is smooth. After 5 minutes of mixing, you will get a creamy texture. Add food color if desired.

For Assembly:

  • Now, let’s assemble macarons. 
  • Fill this buttercream into the piping bag. Take one shell and pipe your buttercream filling. Close it with another shell. 
  • Repeat with all the remaining cream and shells, and enjoy!
