Method to Prepare 

  • Take a pan, pour water, and bring it to a boil. Then, add macaroni and cook it until al dente. 
  • Meanwhile, melt butter in a pan and mix two teaspoons of flour into it. 
  • Then, gradually add milk. Here, you will need to keep stirring otherwise lumps will be formed. 
  • After that, add the kinds of cheese you are using and cook until the cheese is melted and the sauce is thick. We have used cheddar and red Leicester cheese here. 
  • Season the thick sauce with salt and pepper as per your liking.

  • 2kg boneless pork belly, skin well scored in a crosshatch pattern
  • sea salt
  • 2kg of medium sized floury potatoes

  • a large knob of butter
  • 1 bulb garlic, broken into cloves
  • a few sprigs of thyme
  • 150ml white wine

For gremolata 

  • a small bunch of curly parsley, finely chopped
  • 1 lemon, zested
  • 1 clove of garlic, finely chopped

Method to Prepare 

  • If you are preparing the pork ahead, put the pork belly uncovered, skin up on a large plate. 
  • Sprinkle it with sea salt and slide it into the bottom shelf of the fridge overnight. Doing this will help dry out the skin and give better crackling to the meat. 
  • When you are ready to cook, just take the pork out of the fridge and leave it at room temperature for at least an hour before you slide it into the oven.
  • Begin the recipe by taking out the pork belly from the fridge. Keep it aside at room temperature. 
  • Now, preheat the oven to 160C. Get a sharp knife and cut down into the potatoes at half-centimeter intervals. Do not cut all the way through. 
  • Pour two tablespoons of olive and butter into a large roasting tin. Choose a tin that can fit all the potatoes. Then, slide it into the oven for a quick 3-minute melt. 
  • After 3 minutes, add potatoes, garlic, and thyme into the pan and toss to coat well. Sprinkle sea salt flakes. 
  • Pat the pork belly with kitchen paper to completely absorb the moisture and make it dry. Rub a little olive oil on the skin and sprinkle it with sea salt. 
  • Place the pork belly on top of the potatoes and pour white wine around. 
  • Cover the potatoes with foil but keep the pork skin uncovered to the heat of the oven. 
  • Slide it into the oven and cook the pork and potatoes for at least 1 ½ hours. After that, take it out and remove the foil. 
  • Increase the heat to 220 degrees. Bathe the potatoes with the pan juice, then slide the tin back into the oven for 45 minutes to one hour. 
  • Bake the potatoes until they are crisp and pork skin has turned to crackling. 
  • Take it out of the oven and let the pork rest for 20 minutes. 
  • Meanwhile, mix all the gremolata ingredients and scatter over the pork and potatoes.

  • 250g pack phyllo pastry

Method to Prepare 

  • Preheat the oven to 400°F. Then, add butter and olive oil into a shallow dutch oven and heat it over medium heat. 
  • Then, add leeks, garlic, and mushrooms and sauté everything for 2 minutes. If you are using white wine, deglaze the pan with it. 
  • Stir through the frozen spinach and cook for around 2 minutes, until it starts to wilt. 
  • Then, add chicken and sprinkle flour. Give it a good stir. After that, pour chicken stock and mustard along with the lemon zest. 
  • Now, bring to a simmer and cook veggies for about 10 minutes, uncovered, until liquid is reduced and slightly thickened. 
  • After that, add peas, sour cream, and herbs. Remove the pot from the flame. 
  • Taste the chicken pie mixture and add salt and pepper according to your taste.

  • First, preheat the oven to 180°C. Then, line a 12-hole muffin pan with paper cases. 
  • Now, make the cake mixture as per the direction. Stir in the crushed flake bars and divide the mixture between cases. 
  • Then, slide the pan into the oven and bake for 25 minutes, until golden. 
  • Let the pancakes rest for around 2 minutes and then transfer them to a wire rack for further cooling. 
  • Meanwhile, prepare buttercream icing. Get an electric mixture and beat the butter until it is light and fluffy. 
  • Then, add the icing sugar mixture, milk, and vanilla to the butter gradually. Beat the mixture well and reserve around ¼ cup of icing in another bowl.
