Ingredients 

Cannoli

  • 2 cups all-purpose flour
  • Two tablespoons of granulated sugar
  • Three tablespoons of unsalted butter
  • 1/4 teaspoon salt
  • 1/3 cup marsala wine
  • One large egg
  • One egg yolk

Filling

  • 16 ounces ricotta cheese, strained
  • 1/2 cup powdered sugar
  • One teaspoon vanilla extract

Method to Prepare 

  • Take a food processor bowl, add flour, sugar, and salt, and pulse them until combined. 
  • Now, add cold butter and pulse until you have small crumbles. 
  • Then, add whole egg, egg yolk, and marsala. Pulse everything together until the dough comes together and turns into a shaggy ball. 
  • Now, turn the dough onto a clean surface and knead for about 5 minutes. 
  • Place the dough into a lightly oiled bowl, cover it with plastic wrap and let it rest for at least an hour. 
  • Meanwhile, take a large pot, add vegetable oil, and heat it over medium heat until it reaches 350°F.
  • Then, roll the dough as thin as possible and cut it into rounds using a cookie cutter. 
  • If you want to make mini cannoli, use a 2-inch cookie cutter. 
  • Then, lightly brush the cannoli with vegetable oil and wrap the dough around each form. 
  • Brush the ends with egg white and press carefully to seal the cannoli. 
  • Then, slide these cannolis into the hot vegetable oil and fry them for a minute each until they turn golden brown. Do not fry more than 4 or 5 cannolis at a time.
