Ingredients 

For the Yeast Mixture:

  • Dry Yeast- 1 tsp
  • Warm water- 1/2 cup
  • Sugar- 1/2 tsp

Wet ingredients: 

  • Milk- 1/3 cup
  • Vanilla essence- 1/2 tsp
  • Egg- 2 nos
  • Unsalted melted butter- 1/4 cup

Dry Ingredients: 

  • All-purpose flour- 2 cups
  • Salt – 1/4 tsp
  • Nutmeg- a peanut-sized (in powder form)
  • Oil- for deep frying

For coating:

  • Sugar- 1/2 cup
  • Cinnamon – 1/2 inch piece – 1 no

Method to Prepare 

  • Take a bow and add yeast, warm water, sugar, and mix well. Let it rest for 10 minutes. 
  • Take another bowl and beat eggs until bubbles form. Then, add milk, vanilla, melted butter, and mix everything well. 
  • Then, add the wet mixture into the yeast mixture and combine well. Set it aside. 
  • Take another wide bowl and add flour, salt, nutmeg powder, and mix well to prevent lumps from forming. 
  • Make a well in the middle of the bowl and then add the yeast mixture to it. Combine everything to form a soft dough. 
  • Cover the dough with plastic wrap for at least a couple of hours, until it doubles in size. 
  • Make medium sized balls and keep them closed for around 20 minutes. 
  • Meanwhile, heat oil in a kadhai and deep-fry each bowl, till they are golden brown. Drain the oil by putting them on paper towels. 
  • Powder them with sugar and cinnamon and enjoy warm, soft, and puffy malasadas with a hot cup of tea!
