Ingredients 

  • 1 small handful of dried shrimp
  • 2 tablespoons ketchup
  • 1 tablespoon Sriracha chili sauce
  • 2 tablespoons peanut oil
  • 3 eggs, lightly beaten
  • 1 tablespoon peeled and grated ginger
  • 1 medium carrot, cut in 1/4-inch dice
  • Char siu, medium bowl 
  • 3 fresh shiitake mushrooms, stemmed and diced
  • 1 cup frozen peas
  • 3 cups cooked jasmine rice, a day old
  • 1 to 2 tablespoons light soy sauce
  • Sea salt and freshly ground white pepper
  • 1 teaspoon toasted sesame oil
  • 2 green onions, sliced, for garnishing 

Method to Prepare 

  • Take a small bowl and soak dried shrimp in hot water for 20 minutes. After 20 minutes, drain and set them aside. 
  • Now, take a small bowl and add chili sauce and ketchup. Mix them well and keep your spicy ketchup sauce aside. 
  • Heat a wok over a high flame and add one tablespoon of peanut oil. 
  • Crack the eggs and scramble, then set them aside on a plate. 
  • Add the remaining one tablespoon of peanut oil into the wok and stir-fry ginger for about a minute. Add carrots and stir-fry it as well for about a minute. 
  • Add char siu, soaked shrimp, and mushrooms into the wok. Cook for a couple of minutes. 
  • Then, add peas and cooked rice and toss them together. Add the scrambled egg back into the wok. 
  • Pour light soy sauce and sprinkle salt and pepper to provide seasoning to the rice. 
  • At the very end, add sesame oil and spicy ketchup. 
  • Taste the rice and adjust its taste with salt and pepper. 
  • Sprinkle green onions and serve immediately.
