- 1 box of jumbo pasta shells
- 2 teaspoons of olive oil
- ½ bunch of broccoli
- 1 cup of shredded carrots
- 1 small onion
- 1 clove of garlic
- 1 cup of fresh spinach
- ¼ cup of freshly chopped basil
- 1 cup of low-fat cottage cheese
- 2 tablespoons of grated parmesan cheese
- ¼ teaspoon of each salt and pepper
- 1 ½ cup of marinara sauce
- ½ cup of mozzarella cheese
Method to Prepare:
- Heat your oven on 400 degrees F and cook pasta in a large pot of salted boiling water, drain and cool on a baking sheet.
- In the meantime, take a large skillet and heat oil over medium-high heat. Sauté broccoli, onion, garlic, and carrots until tender, for about 3 minutes.
