Ingredients:

  • 2 tablespoons olive oil, divided
  • 1 small sweet potato, peeled and diced into cubes
  • 2 cups of bell pepper, red onion, and corn
  • 1 small jalapeño, cored and finely chopped
  • 15-ounces of canned pinto or black beans, rinsed and drained
  • 1 teaspoon of ground cumin
  • ½ teaspoon of chili powder
  • Fine sea salt and freshly ground black pepper, to taste
  • 4 to 6 large flour tortillas
  • 3 to 4 cups of shredded cheese, parmesan or mozzarella as per your taste
  • 1 cup of fresh chopped cilantro
  • Salsa, for dipping

Method to Prepare:

  • Take a large non-stick sauté pan and heat 1 tablespoon of oil into it and add sweet potato into it and sauté it for 5 to 6 minutes. Separate to it on another plate and set aside.
  • Add the remaining oil to the pan and stir in jalapeño and veggies into it. Sauté it for 5 to 6 minutes.
  • Now, add sweet potatoes, black beans, cumin, chili powder, a pinch of salt and black pepper, and sauté it for 2 minutes.
  • Taste the mixture and add salt, cumin, or pepper if needed and transfer the mixture to a large bowl and set it aside.
  • Put the sauté pan on the stove and turn on the heat to medium flame and place the tortilla in the center of the pan and sprinkle your cheese over the surface of the tortilla.
  • Now, add a spoonful of veggie mixture on the tortilla and sprinkle some cilantro to give it a delicious aroma.
  • Fold the other side of the tortilla and make a half-moon. Cook the tortilla for about 30 seconds until one side of it become golden and crispy.
  • Then cautiously turn the tortilla over and cook it for another 30 to 60 seconds.
  • Transfer it to a serving plate and slice it into triangles and do this process for another batch.
  • Get salsa or sour cream and serve it warm and enjoy it!
