Ingredients 

  • Dough for single-crust pie
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 2 cups 2% milk
  • 1/2 cup butter, cubed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Method to Prepare 

  • Firstly, preheat the oven to 450°. Then, roll the dough into a thick circle on a lightly floured surface and transfer it to a pie plate. 
  • Trim the crust beyond the rim of the plate and flute edges. Slide the pie plate into the fridge for half an hour. 
  • Then, line the unpricked crust with a double thickness of aluminium foil and fill it with dried beans, uncooked rice, or pie weights. 
  • Slide the pie plate into the lower oven rack and bake until the edges are light golden brown, for 20 minutes. 
  • Take out the plate, remove the foil, and slide the pie back into the oven. Bake until the bottom is golden brown, for 5 minutes. 
  • Let it cool on a wire rack and decrease the temperature to 375°.
  • Meanwhile, combine sugar and cornstarch in a large saucepan and stir in milk until smooth. 
  • Bring everything to a boil. Then, reduce the heat, cook and stir for a couple of minutes until the mixture is thick and bubbling. 
  • Remove the saucepan from the heat and stir in butter and vanilla. 
  • Pour this mixture into the crust, and sprinkle a generous amount of cinnamon powder. 
  • Slide the plate back into the oven and bake for 15 to 20 minutes, until golden brown. 
  • Once baked, cool it on a wire rack, then put it into the fridge until chilled. 
  • Serve the sugar pie and enjoy!
