Ingredients:

  • Half a cup of sooji/semolina
  • One-third cup or 5-6 tablespoons of sugar
  • 6 tablespoons of ghee 
  • Half a teaspoon of cardamom powder
  • 10-12 cashews, cut them into halves or use whole
  • 2 tablespoons of raisins
  • 1 teaspoon of chironji (optional)
  • Water 1 cup
  • 1 pinch of edible camphor (optional)

Method to Prepare:

  • Take a Kadai or a pan and heat it on a low flame. Add ghee and let it heat.
  • Meanwhile, take another pan and add sugar and water to it.
  • Heat the sugar mixture from medium to high heat and let it come to a boil.
  • Now, move to the first pan. Once the ghee is melted, add sooji(semolina) and cashews to it. Stir well.
  • Ensure you stir the semolina lightly and continuously to prevent it from sticking to the pan’s surface.
  • Keep track of the sugar syrup in the second pan.
  • Stir it occasionally and when it starts boiling, simmer the flame and let it cook until the sugar dissolves completely.
  • Heat it for 4 to 5 minutes until the solution becomes thick.
  • Keep stirring the semolina for 7 to 8 minutes until it starts changing its colour.
  • Once the colour is changed, add raisins and mix well with the cooked semolina.
  • Now, add the hot sugar solution to the cooked semolina. Be very careful as the mixture splutter.
  • Then, stir continuously with the other hand while pouring the sugar syrup, as the semolina mixture will absorb water quickly and begin to swell.
  • Stir the mixture until it becomes thick and start leaving the edges of the pan.
  • Serve this sooji halwa hot or let it cool at room temperature.
