Ingredients:

  • 4 tbsp. butter
  • 1/4 cup all-purpose flour
  • One small yellow onion
  • One medium green bell pepper, chopped
  • Two celery ribs, chopped
  • Two cloves garlic, minced
  • 12 oz. andouille sausage, sliced into 1/2″ pieces
  • 1 tbsp cajun seasoning 
  • kosher salt
  • Freshly ground black pepper
  • One bay leaf
  • One can fire-roasted diced tomatoes
  • Four cups chicken broth
  • 1 lb. shrimp, peeled and deveined
  • Three green onions, sliced
  • cooked white rice for serving

Method to Prepare:

  • Take a large, deep skillet and melt butter over medium flame. 
  • Once the butter is melted, add flour.
  • Cook for at least 10 minutes until you get a dark caramel color of flour.
  • Now, add onions, peppers, celery, and stir until tender, for around 5 minutes. 
  • Add garlic and sausage, and then stir in Cajun seasoning with salt and pepper. 
  • Now, throw some bay leaf, tomatoes, and chicken broth. Bring it to a boil. 
  • Reduce the flame to low and simmer the broth until thickened for about 50 minutes. 
  • Now, add shrimps into the broth and cook it for 10 minutes more. 
  • Once shrimp is cooked thoroughly, you will notice a color change. 
  • When shrimps turn pink, taste the gumbo and adjust the seasonings as per your liking. 
  • Now, stir in green onions, reserving some for garnish.
  • Serve spooned on top of white rice.
  • Garnish it with the remaining green onions.

Recipe Notes:

  • Every good gumbo starts with a mixture of butter and flour called a roux. You should be stirring somewhat constantly. If you forget to stir, the roux will easily get burnt, and you will have to start over.
  • Subbing in a spicy Italian for a hot Italian sausage or chicken sausage for a pork sausage is fine. However, you can’t use any sausage as andouille is a must in a seafood gumbo recipe.
