Ingredients 

  • 375 g all-purpose flour
  • 3.75 tsp baking powder
  • 1.5 tsp salt
  • 1.5 tbsp granulated sugar
  • 300 ml milk whole, skimmed or vegetable, at room temperature
  • 3 egg yolks at room temperature
  • 180 g melted unsalted butter cooled to room temperature
  • 3 egg whites at room temperature
  • 75 g grated mozzarella cheese
  • Chopped fresh herbs
  • Vegetable oil for cooking

Method to Prepare

  • Take a bowl and combine flour, sugar, salt, and baking powder. Mix them using a whisk. 
  • Take another bowl and add milk, butter, and egg yolks together. 
  • Now, make a well at the center of the dry ingredients and pour the milk mixture into it. 
  • Starting from the center, mix the dry ingredients and then begin incorporating the dry ingredients from the sides.
  • Take a clean bowl and whip up the egg whites with the help of an electric mixer until you achieve a soft peak. 
  • Once you get the soft peak, use a spatula and incorporate them into the mixture prepared earlier. Also, add cheese and herbs.
  • Now, preheat the waffle iron.
  • Once it is hot, paint it with oil. Ensure that oil reaches every crevice.
  • Now, place about ¼ cup of prepared dough onto the heated waffle iron and close it. 
  • Wait for around 5 minutes as it will take much time for your waffles to be ready. 
  • Avoid opening it before time or it will break in half.
