  • First, take four small glasses and press a layer of crushed biscuits at the bottom.

  • 5 gm red chili powder
  • 2 gm yellow chili powder
  • 10 gm cheese cubes
  • One dash spice cardamom
  • 1 gm fennel seeds powder
  • 20 gm mint
  • Three green chili
  • 15 gm ginger paste
  • 20 ml lemon juice
  • 60 gm hung curd
  • 2 gm garam masala powder
  • Two dry red chili
  • One tablespoon fresh cream
  • 1 gm white pepper powder
  • 30 gm coriander leaves
  • 2 gm kasoori methi leaves
  • One tablespoon chaat masala powder

Method to Prepare 

  • Take a large mixing bowl and add salt, lime juice, olive oil, ginger, and garlic paste. Make a smooth paste. 
  • Then, add cubed paneer into this marinade before you start making sauces. 
  • We will make three colors of marinade – Hyderabadi (Saffron Red), Afghani (White), and Hariyali (Green) marinades. 
  • For the Hydrabadi mix, take a large mixing bowl and combine 30 grams of hung curd, homemade garam masala, and yellow chili powder. 
  • Take a small saucepan and saute mustard seeds, dry red chilies, and curry leaves in mustard oil. Add it to the Hyderabadi marinade and set it aside. 
  • Now, let’s make the Afghani (White) marinade. Add hung curd, cashew, cheese, fresh cream, cardamom powder (Elaychi powder), white pepper, and fennel powder in a mixing bowl. 
  • Give it a good mix and set the marinade aside. 
  • Now, for Hariyali (Green) marinade, take a blender jar and add green chili, mint leaves, kasoori methi, and coriander leaves. Add water and blend to make a fine paste. 
  • Combine this green paste with hung curd, mustard oil, and lime juice. Sprinkle some chat masala and keep the marinade aside. 
  • Keep two pieces of paneer for each color. 
  • Marinate all the paneer pieces in the prepped marinades. 
  • In other words, dip two pieces of paneer in the Hyderabadi marinade. Then, add another two pieces in the Afghani marinade and add the remaining paneer pieces in the Hariyali marinade. 
  • Let the paneer marinate for an hour at least. 
  • Once marinated, stab the paneer pieces in kebab skewers and arrange them according to the tricolor. 
  • Keep saffron on the top, then white, and lastly, green paneer.
