  • 8 pieces of Ras Malai
  • 4 teaspoons of instant coffee powder
  • 2 cups of Mascarpone cheese
  • 2 cups of whipped cream
  • 1 eight-inch eggless sponge cake
  • 2 teaspoons of cocoa powder
  • 2 teaspoons of icing sugar

Method to Prepare:

  • First of all, heat one cup of water into a non-stick pan and add the instant coffee powder into it.
  • Heat it for about 1 minute until you can smell the aroma of coffee leaving the pan!
  • Take a bowl and add mascarpone cheese into it. Whip it for about a half minute. 
  •  Now, add the whipped cream into it and whisk again and set it aside. 
  • Take a cookie cutter and cut the sponge cake into vertical roundels and further go ahead and cut them into horizontally ½ inch thick round slices.
  • Now, the assembling process begins here!
  • Place 4 glasses and put cake slices at the base of each glass.
  • Pour the liquid coffee in each glass and put 2 tablespoons of cheese-cream mixture in each glass and don’t forget to tap the glass as it will set the cake and get the coffee down. 
  • Take Ras Malai out and squeeze them. Place one in each glass. Keep more Ras Malai handy as you will be desirous to eat one or two while assembling it! 
  • Now, again pour 3 tablespoons of coffee over it. 
  • Squeeze the remaining 4 Ras Malai and place one in each glass. (Now, eat the extra Ras Malai without worry!)
  • Put 2 tablespoons of cheese-cream mixture in each glass and spread it with the help of a spatula.
  • Sprinkle cocoa powder and icing sugar on the top and garnish it with some almond and mint leaves and serve!
