Ingredients 

  • 8 ounces of Cheese Curds

Fries

  • Two large russet potatoes
  • One tablespoon of olive oil
  • seasoned salt to taste

Brown Gravy

  • One teaspoon of olive oil
  • ½ onion diced
  • 2 cloves garlic minced
  • ½ teaspoon thyme
  • ½ teaspoon pepper
  • ¼ cup butter
  • ¼ cup flour
  • 1 ¼ cup condensed broth; you can use chicken or beef broth

Method to Prepare 

  • Preheat the oven to 375°F. Then, take a baking sheet and line parchment paper. 
  • Now, wash the potatoes and peel them if desired. Cut them into ¼-inch fries. 
  • Slide the potatoes into cold water and let them soak for at least 30 minutes. After half an hour, remove them from the water and dry them well. 
  • Toss fries with oil and salt and spread on the prepared pan in a single layer. 
  • Slide the baking tray into the oven and bake for 20 minutes. Turn the heat to 425°, stir, and cook the fries for 20 to 25 minutes, until golden. 
  • Meanwhile, let’s prepare the sauce. Cook onion in oil over medium flame until tender. 
  • Add garlic and seasonings and cook for 2 minutes. 
  • Add butter and stir until melted. Then, add flour and cook for around 5 minutes, stirring constantly.
  • Now, add the broth you are using. Add 1 cup of water a bit at a time while stirring after every addition until smooth. 
  • Bring it to a boil, reduce the heat, and simmer for 2 more minutes. Strain it through a mesh strainer. Your sauce is ready. 
  • Place your fries on a serving plate, top it with cheese curds, and pour a hot gravy over the fries and cheese. 
  • Serve immediately and enjoy!
