  • ½ lb potato
  • 2 tbsp olive oil
  • salt
  • Two scallions sliced
  • 4 oz freshly grated cheddar cheese
  • Eight large eggs
  • 2 tbsp heavy cream

Method to Prepare 

  • First, preheat the oven to 375 degrees F.
  • With the help of a mandoline cutter, slice the red potatoes thinly.
  • Then, take an ovenproof non-stick skillet and add olive oil. Layer the sliced potatoes in a single layer. 
  • Sprinkle a pinch of salt and dust some paprika to season the potatoes.
