Ingredients 

  • 4 cups tapioca flour
  • 1 ¼ cups milk
  • ½ cup water
  • 6 tablespoons oil
  • 1 ½ cups grated parmesan cheese
  • 1 cup shredded Mozzarella cheese
  • 2 large eggs
  • 2 teaspoons salt

Method to Prepare 

  • First, preheat the oven to 400F degrees and put a rack in the middle.  
  • Now, take a saucepan and add milk, water, oil, and salt. Bring it to boil over medium-high flame. 
  • Then, add the tapioca flour to the bowl of a stand mixer. Once the milk mixture is boiled, pour it into the mixer bowl and turn it on. Mix it well. 
  • You will get a fondant-like mixture. 
  • Keep the mixer still on and crack the eggs one at a time. 
  • Once all the eggs are added, add the cheese, a little at a time, until everything is fully incorporated. 
  • You will get a soft and sticky dough. However, if your dough is liquidy, you can add some more tapioca flour. 
  • But don’t overdo it otherwise your cheese puff will be tough instead of gooey. 
  • Now, shape the balls by wetting your hands with cold water. Scoop some of the dough with a spoon and shape them smaller than golf balls.
