Ingredients 

  • Large pinch saffron strands
  • 1 vegetable or chicken stock cube
  • 3 tbsp olive oil, plus extra for drizzling
  • 125g chorizo, roughly chopped
  • 500g chopped boneless, skinless chicken breasts or thighs 
  • 1 onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 red pepper, deseeded and chopped
  • 2 tsp paprika
  • 250g Spanish paella rice
  • 4 medium tomatoes, roughly chopped
  • 75g frozen peas
  • 250g cooked prawns, rinsed and shells on
  • Small handful flat-leaf parsley, chopped, to serve
  • Chopped lemon wedges, to serve

Method to Prepare 

  • Add saffron strands into the stock and keep it aside to infuse while you prepare the rest of the paella. 
  • Now, heat one tablespoon of oil in the special paella pan or a deep frying pan. Add chorizo and fry them for 3 minutes, until they are crispy and oil is released. 
  • After 3 minutes, remove them and drain on kitchen paper, leaving oil in the pan. 
  • Add the chicken into the pan and fry them over high flame for around 8 minutes, until the meat is cooked through and golden. 
  • Transfer the browned chicken to a bowl and keep it aside. 
  • Add one more tablespoon of oil into the pan and add chopped onion and garlic. Stir-fry it for 5 minutes, until softened and starting to color. 
  • Then, add pepper and paprika with the remaining tablespoon of oil and stir-fry it for another minute. 
  • Do not scrape the pan as it will have lots of crispy, brown bits on the bottom. It will enhance the flavor of your dish. 
  • Keeping the flame high, quickly add the rice so it is well-coated in the oil. 
  • Take the saffron-infused stock with around 450ml of water and pour it into the pan. Here, take a wooden spoon and scrape the sticky brown bits from the bottom pan. 
  • Add the browned chicken pieces to the pan, then chopped tomatoes. Cover the pan and cook on a medium flame for around 10 minutes, stirring once or twice. 
  • Spatter the peas, prawns, and fried chorizo over the top and cover it. 
  • Cook it for a further 5 to 10 minutes, until the rice is just cooked and most of the liquid in the pan is absorbed.
  • Remove the pan from the flame, put the lid on, and leave to rest for around 5 minutes. 
  • Stir it a few times to perfectly mix the ingredients, seasons as per your liking, and sprinkle chopped parsley. 
  • Serve the paella with lemon wedges, an extra drizzle of oil, and enjoy!
