Ingredients 

  • ¼ cup plus one teaspoon granulated sugar, divided
  • 1/2 cup lukewarm water
  • 4 ½ teaspoons instant dry yeast
  • 4 cups all-purpose flour
  • Two large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 8 cups vegetable or sunflower oil for frying
  • Confectioners’ sugar, garnish
  • Ground cinnamon, garnish

Method to Prepare 

  • Take a small bowl and add one teaspoon of granulated sugar with water. Sprinkle yeast on top of that mixture and let it stand for at least 10 minutes. 
  • If the yeast doesn’t bubble, discard it and buy new yeast. The lack of bubbles means that the yeast is no longer active. 
  • Now, take a large bowl and mix flour and the remaining ¼ cup of granulated sugar.
  • Make a well in the middle and add eggs and yeast mixture. 
  • Warm up the milk in the microwave until it is just about lukewarm. 
  • Now, add half of the lukewarm milk to the well and mix everything until well combined. 
  • Then, add the rest of the milk and mix it well. 
  • Cover the bowl with a damp towel and keep it aside for an hour to let it rise in a warm area. 
  • After an hour, your dough will be doubled; add salt and let it sit as it is while you heat the oil. 
  • Add oil to a deep fry pan and heat it for frying the oliebollen. 
  • To check whether your oil is hot or not, place the handle of a wooden spoon in the oil. If tiny bubbles form around it, then your oil is ready. 
  • Quickly add two tablespoons of small balls of dough into the hot oil. 
  • The doughball will sink to the bottom of the pan and will pop right back up—Fry no more than six oliebollen at a time to avoid overcrowding the pan. 
  • Fry until both sides are golden brown. Place these oliebollen on paper towels to remove excess oil. 
  • Sprinkle a generous amount of confectioner’s sugar and dust them with cinnamon. 
  • Serve them hot and enjoy!
