  • 2 cups soaked overnight chickpeas
  • 2 chopped onion
  • 1/4 cup tomato puree
  • One teaspoon of coriander powder
  • Five cloves garlic
  • 1/2 teaspoon turmeric
  • 1 1/2 teaspoon chana masala powder
  • 1 teaspoon cumin
  • 1 tablespoon ginger
  • Three tablespoon onion paste
  • salt as required
  • One teaspoon of garam masala powder
  • One teaspoon of red chili powder
For Dough
  • 1 cup all-purpose flour
  • Three teaspoon yogurt (curd)
  • refined oil as required
  • salt as required
  • 1/4 tablespoon wheat flour
For Garnishing
  • Two tablespoon chopped coriander leaves

Method to Prepare 

  • Firstly, soak chickpeas in water overnight or for 6 to 8 hours. If time is not on your side, you can boil chickpeas in hot boiled water for 2 hours. 
  • Then, add the soaked chickpeas, salt to taste, and one tea bag to a pressure cooker. Place the cooker on a high flame. 
  • Boil the chickpeas for 10 to 20 minutes until soft. 
  • Meanwhile, put a pan on medium heat and pour a little oil into it. Add the cumin seeds and sliced onion to the pan. 
  • Saute the onion until golden brown. Then, add minced ginger, garlic, and onion paste. 
  • Saute everything for a few seconds until the raw smell goes away. Then, add tomato puree to it. 
  • Once the oil is separated, sprinkle turmeric powder, coriander powder, red chili powder, and chana masala. 
  • Cook the mixture for a couple of minutes, then add the cooked chole with little water. 
  • Give it a good mix to combine the masala well with the chole. Taste and adjust the salt as per your taste. Let it cook for a few minutes. Your chole is ready!
  • Garnish with chopped onion and coriander leaves.
  • Now, let’s make bhaturas. Take a large bowl and combine all-purpose flour or maida and wheat flour. 
  • Add salt and oil to it and give it a good mix. Add yogurt to the flour mixture and knead the bhatura dough well. 
  • You can also add a little water and knead the dough. When it is done, cover it with a kitchen towel and let it rise. 
  • Meanwhile, pour oil into a deep-bottomed pan and heat it over a high flame. 
  • Pinch an equal size of dough and roll it into big-size puris(bhatura). 
  • When the oil is hot enough, slide these bhaturas into the oil and deep fry.

  • ½ cup moong dal
  • water (for soaking)
  • 1 tsp ghee / clarified butter
  • 1 tsp fennel (crushed)
  • 1 tsp cumin
  • pinch hing
  • ¼ tsp turmeric

  • 1 coriander powder
  • 1 tsp garam masala
  • 1 tsp amchur
  • ¼ ginger powder
  • ½ tsp salt
  • ¼ cup besan
for kachori:
  • 2½ cup maida
  • ½ tsp salt
  • 3 tbsp ghee / clarified butter (hot)
  • water (for kneading)

Method to Prepare 

Making moong dal stuffing
  • Take a bowl and soak ½ of moong dal for 2 hours. 
  • Then, drain off the water and transfer it to a mixer jar. 
  • Pulse and grind to a coarse paste. Transfer it to a bowl and keep it aside. 
  • Then, heat one teaspoon of ghee in a pan and add one teaspoon of fennel, cumin, and a pinch of hing. 
  • Saute everything on low heat until the spices spread the aroma. 
  • Then, add ¼ turmeric, one teaspoon of chili powder, coriander powder, garam masala, and amchur. Then, add ¼ ginger powder and salt as per your taste. 
  • Saute again until the spices are aromatic. 
  • Then, add ¼ cup besan and roast on a low flame until the besan turns aromatic.
  • Finally, add the coarsely grounded moong dal and give it a good mix. 
  • Cook everything for 5 minutes, until the moong dal is well combined. 
  • Your stuffing is ready. Keep it aside and let it cool. 
Making khasta kachori
  • Take a large bowl and add 2 ½ cups of maida and ½ teaspoon salt. Give it a good mix. 
  • Then, pour in 3 tablespoons of ghee and mix again to combine well. 
  • Crumble and mix to ensure the flour is moist.
  • Then, pour water and start to knead the dough. 
  • Pour water as required and knead a smooth and soft dough. 
  • Grease the prepared dough with oil and cover it for half an hour. 
  • After 30 minutes, knead the dough slightly once again. Pinch a small ball-sized dough and tuck well.
  • Also, add oil to a deep frying pan and heat it over medium flame. 
  • Grease with oil and gently roll it. 
  • Place a small ball size of filling inside the dough. 
  • Pleat and seal the dough tight. Pinch off excess dough. 
  • Now, gently roll the dough and provide it with uniform thickness. 
  • Drop the kachoris in hot oil, keeping the flame low. 
  • DO NOT touch the kachori until it starts to float by itself. It will take approx. 3 minutes.

Method to Prepare 

  • Firstly, knead the dough for 10 minutes with the ingredients listed under the section “For the dough.” 
  • Cover the bowl with a moist cloth and let it rest for at least 2 hours in a warm place. 
  • Meanwhile, take a mixing bowl and add the ingredients listed under the “For the stuffing” section. Mix well to combine. 
  • After 2 hours, pinch a ball-sized dough and roll out a circular disk. Place a spoonful of aloo stuffing in the center.
