  • One and a half cups of Arborio rice
  • Half a cup of dry white wine
  • Sea salt to taste

  • Three tablespoons of finely chopped chives
  • Four tablespoons of butter
  • One-third cup of freshly grated Parmesan cheese

  • In a saucepan, warm all the broth over low heat.
  • Heat two tablespoons of olive oil in a large saucepan over medium and high heat.
  • Stir in the mushrooms and cook them until they become soft

  • Add half a cup of broth to the rice. Stir until broth is absorbed.
  • Continue adding broth half a cup at a time and stir continuously until the liquid is absorbed.
  • Remove from heat, and stir in mushrooms with their liquid, butter, chives, and parmesan.
  • Season with salt and pepper to taste.
