Ingredients:

  • ½ lbs. your favorite pasta
  • 3 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • ½ medium yellow onion, diced
  • 12 oz. of baby Portobello mushrooms, sliced
  • Salt and pepper to taste
  • 2 tablespoons of flour
  • 2 cups of milk
  • 1 ½ cup of shredded parmesan cheese

Method to Prepare:

  • Cook the pasta as per instructions give on the package in very salty water until they are al dente. Then drain and set them aside.
  • Get your pasta back on the stove and add olive oil and turn the heat into medium-high.
  • Now, add onion and garlic in the oil and sauté them until the onion is soft, for about 2 minutes.
  • Now, add sliced mushrooms and cook them for about 5 minutes until they are brown, and add salt and pepper to infuse flavor into the recipe.
  • You will notice a bit of liquid in your pan with our mushrooms and this is what you should be looking for. If you don’t see this liquid; add a spoon or more of olive oil into the skillet.
  • Now, add flour to the mushrooms and let it soak up any liquid, and form a roux.
  • Slowly add milk to the mushrooms and stir accordingly to break up any chunks formed in the mixture. Cook for 5 to 6 minutes until the sauce is thickened.
  •  Remove the sauce from the heat and throw in the parmesan cheese into it.
  • Now, stir in the pasta to the sauce and mix well to combine.
