Ingredients 

  • 2 tablespoons vegetable oil
  • 1 large onion, chopped 
  • ½ red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh minced ginger
  • 2 tablespoons yellow curry powder
  • ½ teaspoon ground cumin
  • 2 mangos, peeled and diced
  • 2 tablespoons white vinegar
  • 1 can (full-fat) coconut milk 
  • 1 ¼ pounds chicken thighs, boneless, skinless, cut into pieces 
  • ⅓ cup golden raisins, optional
  • Kosher salt and freshly ground black pepper
  • Cilantro for garnish
  • Cooked rice, to serve

Method to Prepare 

  • Take a large saute pan and heat oil over medium flame. Add onions and bell pepper to it. 
  • Cook and stir them occasionally, for about 5 minutes until onions are soft. 
  • Now, add garlic and ginger and cook for 1 more minute. 
  • Add curry powder and cumin and cook for another minute.
  • The added spices will absorb some oil. If anything begins to stick too much, add a little more oil to the pan. 
  • Pour vinegar and coconut milk and add one of the two chopped mangoes to the pan. 
  • Increase the flame and bring everything to a boil, and then decrease it to maintain a low simmer for 15 minutes. Keep stirring occasionally. 
  • Remove the pan from the heat and scoop the sauce into a blender jar. Pulse the sauce until smooth and return it to the pan. 
  • Add chicken pieces and raisins to the pan and return to a low simmer. 
  • Cover the pan with a lid and cook the gravy for 8 to 10 minutes, until the chicken is done. 
  • Then, add the remaining chopped mango into the pan and stir in the cream, if using. 
  • Keep the pan uncovered and cook at a very low temperature for around two more minutes. 
  • DO NOT allow it to boil or the cream may curdle! 
  • Taste the curry and adjust it according to your liking. 
  • Serve it with steamed rice and enjoy!
