Ingredients:

For making rolls

  • 2 cups of finely ground almond flour
  • 2 tablespoons of coconut flour
  • 4 tablespoons of low-carb granulated sugar
  • 1 tablespoon of gluten-free baking powder
  • 2 eggs
  • Two teaspoons of pure vanilla extract
  • 2 cups of shredded mozzarella
  • 4 ounces of cream cheese
  • 3 tablespoons of melted butter
  • One-third cup of packed low-carb brown sugar
  • 1 tablespoon of ground cinnamon 

For Glaze

  • 3 ounces of cream cheese
  • 2 tablespoons of heavy cream
  • 2 tablespoons of low-carb granulated sugar

Method to Prepare:

  • The low-carb cinnamon rolls recipe starts with making the rolls. For this, take a large bowl and add almond flour, coconut flour, granulated sugar, and baking powder. Mix all these ingredients well.
  • Take another small bowl and whisk 2 eggs and vanilla extract in it.
  • Now, take a microwave-safe bowl and add shredded mozzarella cheese and cream cheese. Microwave these ingredients until they melt or for around 90 minutes. Make sure to stir them every 30 seconds.
  • Now it’s time to add whisked eggs and this melted mixture of cheese into the bowl of the dry mixture. Knead everything properly until all ingredients combine well.
