  • 1/2 cup almond flour 
  • 1/4 cup cocoa powder
  • 3/4 cup erythritol 
  • 1/2 tsp baking powder
  • One tablespoon instant coffee optional
  • 10 tablespoons butter (or 1/2 cup + 2 Tbsp)
  • 2 oz dark chocolate
  • Three eggs at room temperature
  • ½ teaspoon vanilla extract optional

Method to Prepare 

  • First of all, preheat the oven to 350 F and line a baking sheet with parchment paper. 
  • Now, take a mixing bowl and combine almond flour, cocoa powder, erythritol, baking powder, and lastly, instant coffee. 
  • Give it a good whisk to avoid any clumps from the erythritol.
  • Then, take a sizable micro-safe bowl and combine butter and chocolate to it. Slide it into the oven for 30 seconds or until just melted. 
  • Now, add eggs and vanilla and give it a gentle whisk.
