Ingredients:

For stuffing

  • 1 cup chopped cauliflower florets
  • Half cup of chopped carrots
  • Half cup of potatoes
  • Half cup of chopped French beans
  • One-third green peas
  • One and a half cups of water
  • 2 tablespoons of vegetable oil
  • 2 pinches of carom seeds
  • 2 pinches of cumin seeds
  • Half cup of finely chopped onions
  • 1 teaspoon of ginger-garlic paste
  • Half cup of chopped tomatoes
  • Half cup of chopped green bell pepper
  • 2 pinches of turmeric powder
  • Half teaspoon of Kashmiri red chili powder
  • Half teaspoon of coriander powder
  • Half teaspoon of garam masala
  • One-fourth cup of chopped coriander leaves
  • One-fourth cup of grated paneer (optional)
  • Salt as per your taste

For Rotis

  • 2 cups of whole wheat flour
  • Half teaspoon of salt
  • 1 tablespoon of oil
  • 1 cup of water
  • Ghee or oil for roasting Rotis

For toppings

  • One-third thinly sliced onions
  • Half teaspoon of chaat masala
  • One-fourth teaspoon of Kashmiri red chili powder
  • Half teaspoon of lemon juice
  • Grated cheese as required (optional)

Method to Prepare:

Knead dough

  • Take a mixing bowl and add 2 cups of whole wheat flour, oil, and a little salt.
  • Firstly, add a half cup of water in flour and mix them well. Now, slowly add another half cup of water while kneading dough. You can add more water if required. Make sure that the dough must be smooth and soft.
  • Now, cover the dough and keep this bowl aside and let it rest for 30 minutes.

Stuffing

  • In the meantime, wash all chopped vegetables, cauliflower florets, carrots, potatoes, French beans, and green peas. Add them in a bowl that can easily fit inside 3 liters of the pressure cooker.
  • Add one and a half cups of water in a pressure cooker and keep a bowl in it
  • Now, you have to cook these veggies for around 12-15 minutes over medium heat. Make sure that veggies are cooked well. Once they are done, keep the bowl aside.
  • Take a pan and add 2 tablespoons of oil. Heat it over medium heat. Add 2-2pinches of carom seeds and cumin seeds and let them splutter.
  • After this, add finely chopped and sauté them until they turn translucent. Then, add ginger-garlic paste and sauté it for 1-2 minutes. Add half a cup of chopped tomatoes and mix everything well. Cook tomatoes on medium heat for 2-3 minutes or until they turn soft.
  • Now, it’s time to add all spices, so add turmeric powder, Kashmir red chili powder, coriander powder, and garam masala, and mix all spices well with the onion and tomatoes mixture.
  • Add all the cooked veggies with the water if there is any in the mixture and add salt if required. Cook everything properly over medium heat for 4-5 minutes. You need to ensure that this veggie stuffing should be dry, so cook it accordingly.
  • Now, add coriander leaves and mix well. If you want, you can add grated paneer in this mixture, it is optional. Check the taste of this stuffing and if more salt is required, add it and keep the stuffing aside.

Topping

Take a small bowl; add thinly sliced onions, chaat masala, Kashmiri red chili powder, and lemon juice. Mix all these ingredients well. Cover the bowl and keep it aside.

Make Rotis

  • After 30 minutes, knead the dough once again, it will come out quite smooth. Now, make small/medium balls of this dough based on the size of rolls/wraps you want to make. 
  • Now, pour some flour on the flat surface and gently roll the dough in a circle to make a thin roti, make sure that roti should not be thick.
  • Put a Tawa on medium heat and place the roti on it. When you see bubbles on the roti, flip it using the spatula and spread some oil on this side. Cook both sides of the roti until they turn golden brown. One thing must be noted that Tawa should be hot when you prepare roti, otherwise your roti will become papad.
  • You can flip the roti one or two times to make it roasted evenly. Once it is cooked properly, keep it in a roti basket or in a casserole. You have to prepare as many Rotis as you want in the same way.

  • Take one roti and place some portion of the stuffing on one side of the roti. If you have green chutney at home, you can spread a little chutney on the roti before adding stuffing on it. It is optional, so don’t worry if you don’t have any.
  • Now, sprinkle some chaat masala on the stuffing and then add some onion topping on the top. After this, you can add grated paneer or cheese if you have and then roll the roti.
