1.Yogurt-peach Semifreddo

Ingredients:- 

  • 2 ripe peaches, unpeeled, pitted, sliced
  • 1 1/4 cups sugar, divided
  • 3 large egg whites
  • 1/8 teaspoon kosher salt
  • 1 cup plain Greek yogurt
  • 3 tablespoons fresh lemon juice
  • 1 cup (packed) fresh mint leaves, finely chopped

Method to Prepare:- 

  • Line 8 1/2×4 1/2″ loaf pan with plastic wrap, leaving a generous overhang on all sides.
  • Cook peaches and 1/4 cup sugar in a large skillet over medium heat, stirring occasionally until peaches are softened and sugar is dissolved for about 5 minutes. 
  • Transfer to a blender and purée until smooth. Let cool.
  • Meanwhile, whisk egg whites, salt, and the remaining 1 cup sugar in a medium heatproof bowl set over a saucepan of simmering water.
  • Cook, whisking constantly until sugar is dissolved and mixture is warm to the touch, 2–4 minutes. Remove bowl from saucepan. 
  • Using an electric mixer on high speed, beat egg mixture until tripled in volume, glossy, and completely cool, about 10 minutes.
  • Whisk yogurt and lemon juice in a large bowl, then stir in mint. Gently fold in egg white mixture until combined.
  • Transfer half of the yogurt mixture to the prepared pan; smooth surface. 
  • Swirl half of the peach mixture into the yogurt layer with a spoon, then repeat with remaining yogurt and peach mixtures. 
  • Fold plastic wrap overhang over top to seal and freeze until firm, at least 8 hours.
  • Unwrap semifreddo and, using plastic overhang, gently lift from pan. Invert semifreddo onto a cutting board, remove the plastic wrap, and let sit at least 10 minutes to soften. 
  • Slice into 6 even slices, about 1 1/2″ thick; transfer to plates and serve.

Ingredients:- 

  • 3/4 cup (150 grams) granulated sugar
  • 2 cups heavy cream
  • 1 teaspoon flaky sea salt, such as Maldon
  • 1 cup whole milk
  • 1/2 vanilla bean, split open, seeds scraped out
  • 8 large egg yolks

Method to Prepare:-

  • Place sugar in a deep, heavy saucepan set over medium heat. Stir continuously and break up any lumps of sugar—this will help the sugar caramelize evenly. 
  • Bring to a simmer over medium heat, stirring with a spatula to dissolve the sugar, then simmer, without stirring, until the caramel turns the color of a copper penny, about 4 minutes. 
  • If, while the caramel cooks, any sugar crystallizes on the sides of the pan, brush down the sides with a clean, wet pastry brush. Reduce the heat to low, and slowly add 1/2 cup of the cream. 
  • Stir until the cream is well incorporated into the caramel. Remove from the heat and stir in salt. 
  • Should the caramel seize and harden, return the mixture to the heat and stir until it softens. 
  • Remove from heat and set aside. Prepare an ice bath in a large bowl and set another bowl over it. Set aside.
  • Pour the milk and remaining 1 1/2 cups cream into a double boiler or a heatproof bowl set over a saucepan of simmering water. 
  • Add the vanilla bean seeds and pod and warm the mixture until you see steam rising from the top.
  • Meanwhile, in a medium bowl, with a kitchen towel underneath it to prevent slipping, whisk together the egg yolks until uniform. While whisking, add a splash of the hot dairy mixture to the yolks. 
  • Continue to add the dairy mixture, whisking it in bit by bit, until you’ve added about half. Add the yolk mixture to the remaining dairy mixture in the double boiler, and stir in the caramel. 
  • Set the heat under the double boiler to medium and cook the custard, stirring continuously with a wooden spoon and reducing the heat to medium-low as necessary, until steam begins to rise from the surface and the custard thickens enough to coat the back of the spoon. 
  • Hold the spoon horizontally and run your finger through the custard. If the trail left by your finger stays separated, the custard is ready to be cooled.
  • Strain the custard into the bowl sitting over the prepared ice bath and stir for 3 to 5 minutes, or until the custard has cooled. Transfer the custard to a quart-sized container, cover, and refrigerate for at least 4 hours or, preferably, overnight.
  • Pour the chilled custard into an ice cream maker, add the salted caramel, and freeze according to the manufacturer’s instructions. Place the container in which you refrigerated the custard in the freezer so you can use it to store the finished ice cream. 
  • Churn the ice cream until the texture resembles “soft serve.” Transfer the ice cream to the chilled storage container and freeze it until hardened to your desired consistency. Alternatively, you can serve it immediately—it will be the consistency of gelato.

  • 3/4 cup (180 ml) whole milk
  • 3/4 cup (150 g) sugar
  • Pinch of salt
  • 1 1/2 cups (375 ml) heavy cream
  • 1/2 vanilla bean, split lengthwise
  • 4 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 3/4 cup Chocolate-Covered Peanuts
  • Fudge Ripple

Method to Prepare:-

  • Warm the milk, sugar, salt, and 1/2 cup (125 ml) of the cream in a medium saucepan. 
  • With a sharp paring knife, scrape the flavorful seeds from the vanilla bean and add them, along with the pod, to the hot milk mixture. 
  • Cover, remove from the heat and let steep at room temperature for 30 minutes.
  • Rewarm the vanilla-infused mixture. Pour the remaining 1 cup (250 ml) cream into a large bowl and set a mesh strainer on top. 
  • In a separate medium bowl, whisk together the egg yolks. 
  • Slowly pour the warm mixture into the egg yolks, whisking constantly, then scrape the warmed egg yolks back into the saucepan.
  • Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula. 
  • Pour the custard through the strainer and stir it into the cream to cool. 
  • Remove the vanilla bean, wipe it clean of any egg bits, and add it back to the custard. Stir in the vanilla and stir until cool over an ice bath. Chill thoroughly in the refrigerator.
  • When ready to churn the ice cream, remove the vanilla bean (it can be rinsed and reused). Freeze the ice cream in your ice cream maker according to the manufacturer’s instructions. 
  • While the ice cream is freezing, chop the peanuts into bite-sized pieces.
  • Fold the peanut pieces into the frozen ice cream as you remove it from the machine, and layer it with Fudge Ripple.

  • Cut bananas into 1/2″ slices. Arrange in a single layer on a large plate or rimmed baking sheet. Freeze until firm, about 1 1/2 hours.
  • Purée banana slices in a food processor, scraping down bowl as needed, until the mixture becomes creamy, about 3 minutes. 
  • Add peanut butter and 3 Tbsp. water; purée until smooth, about 2 minutes more. 
  • Drizzle jelly over banana mixture, then pulse a few more times to just incorporate jelly and create a speckled appearance.
