  • 7 Ground white pepper (Kali mirch)
  • 1 Assam Tea Bags
  • 1/4 Cup Almonds (badam) – coarsely crushed
  • 2 tsp Poppy seeds (khus-khus)
  • 1 tsp Fennel seeds (saunf) (crushed coarsely)
  • 1/2 tsp Cardamom (elaichi) powder
  • Ground sugar
  • A few Saffron (kesar) strands

Method to Prepare 

  • Take a flask and heat water in it. Then, add some Assam tea bags to infuse their flavor into the water. 
  • Add ¼ cup almonds, Khus-Khus, fennel seeds, and cardamom to the mixture.
  • Then, sprinkle some kali mirch powder and ground sugar as you like. 
  • Cool it in the refrigerator, add a lot of ice and serve strained.
  • Place a few saffron strands over the drink for flavor and color.

Ingredients 

For the Malpua Batter

  • 1 cup whole wheat flour/gehun ka atta
  • Two tablespoon sugar
  • Two tablespoons curd/dahi
  • 1/4 teaspoon baking soda
  • pinch of salt

For the Sugar Syrup

  • 3/4 cup sugar
  • 1/3 cup water
  • pinch of cardamom powder
  • 1/2 – 1 cup water

Other Ingredients

  • 5-7 cashews thinly sliced
  • 5-7 almonds thinly sliced
  • 5-7 pistachios thinly sliced
  • oil/ghee for deep frying

Method to Prepare 

  • Take a wide bowl and add whole wheat flour, curd, sugar, salt, baking, and give it a good mix. 
  • Then, pour water gradually and keep stirring it with a beater. 
  • Mix it until you get a smooth flowing batter. 
  • Give the mixture a good mix. This will ensure that there are no lumps present in the batter. Plus, do not pour water at once. 
  • The quantity of water will depend on the quality of wheat flour used. Hence, it will vary accordingly.
  • Set aside for 15-20 minutes.
  • To prepare sugar syrup, add sugar and water to a pan and allow to boil. Once the syrup starts boiling, reduce the flame to low and check the consistency of the sugar syrup.
  • You should have a one-string consistency sugar syrup.
  • Switch off the flame and add cardamom powder. Set aside.
  • Take a thick bottomed pan and heat oil or ghee over low to medium flame. 
  • Once it is heated, pour a small ladle of batter in the center of the pan without spreading. 
  • Do not touch the batter until it turns golden around the edges. It will spread on its own. 
  • Slowly, it will get immersed in the ghee. Keep the flame to medium. 
  • Once one side is golden, turn it and cook for two to three minutes until golden brown. 
  • Drain the malpua with the help of a slotted spoon and place it in the sugar syrup immediately. 
  • Fully dip the malpua in the syrup for at least half a minute. Repeat the process until the batter is finished. 
  • Get the malpuas out of the syrup and place it on a serving plate. 
  • Garnish it with sliced dry fruit and enjoy! 

Pyaaz ke Pakode 

This Holi recipe will help you make crispy fritters with an outside texture of caramelized onions. Serve these pakoras with fried and salted green chilis and a green or tamarind chutney to fill your festival with sweet, spicy, and tangy flavors!

  • Two medium to large-sized onions
  • 1 cup gram flour (besan) 
  • 1 to 2 teaspoon green chilies
  • One tablespoon chopped coriander leaves – optional
  • ½ teaspoon Garam Masala Powder 
  • ¼ teaspoon turmeric powder 
  • One teaspoon carom seeds (ajwain)
  • One generous pinch of asafoetida (hing) 
  • One pinch baking soda – optional
  • oil as required
  • water as required 
  • salt as required

Method to Prepare 

  • First, slice the onions thinly and add them to a mixing bowl. Also, throw chopped green chiles with it. You can also add coriander leaves. 
  • Now, add carom seeds, turmeric powder, asafoetida, and salt. 
  • Give everything a good mix and cover it. Let the onion mixture sit for around 15 o 20 minutes. 
  • During this time, onions will release the water. Then, if you feel the requirement, add water to the batter. 
  • Then, add gram flour(besan) and baking soda(if using). 
  • Pour the required water to make a medium-thick batter. 
  • Stir the mixture with your hands. Your batter is ready to be fried. 
  • Heat oil in a kadhai on medium-high flame. 
  • Once the oil is hot enough, add a spoonful of onion batter into the kadhai. Ensure that you don’t overcrowd the onion pakora while frying. 
  • Once the pakoras are partially cooked, turn them over and continue to fry. 
  • You will have to turn them in a few more times. Fry them until they are a crisp and golden color. 
  • Remove them and place them on kitchen paper towels to drain the excess oil. 
  • Meanwhile, fry your green chilies in the same oil. Once fried, take them out on a plate and sprinkle some salt. Mix well. 
  • Serve this crispy Holi recipe with fried green chilies and tamarind chutney, and enjoy!

  • Pav bhaji masala two tablespoons
  • Red chili paste ½ tablespoon

  • Fresh coriander leaves, for garnishing

Method to Prepare 

  • Take a non-stick pan and add butter and oil to it. Saute onions until they are translucent. 
  • Then, add ginger garlic paste and again saute for another minute. 
  • Finally, add tomatoes and sprinkle salt. Give it a good mix until the tomatoes are soft and pulpy. 
  • Now, add the spices – sprinkle chili powder and pav bhaji masala and mix well. Cover it and cook for a minute. 
  • Then add red chili paste and pour a little water. Give it a good mix, cover it, and cook until the oil separates. 
  • Add the veggies like cauliflower, green peas, and capsicum, and mix everything well—Cook for a minute. 
  • Add potatoes, mix them again, and cook for one minute. 
  • Sprinkle salt and coriander leaves and let them cook for another minute. Add remaining pav bhaji masala and mix well. 
  • Pour 1 cup water, mix and cook for 5 minutes.
  • After 5 minutes, switch off the gas and mash everything with a hand blender. Add water as required to adjust consistency.
  • Heat another non-stick pan. Strain the prepared mixture into it and heat. 
  • Add mozzarella cheese and processed cheese into the strained mixture and cook it until the cheese melts. 
  • Transfer this cheese bhaji to the fondue pot, top it with butter and serve it with pav pieces.

Methi Malai Paneer Recipe

  • Two medium onions

  • Ginger garlic paste
  • 2-3 Green chilies

  • 1/2 cup malai or fresh cream
  • 10-15 Cashews
  • 3-4 tsp oil
  • to taste salt
  • 2 tsp coriander powder
  • 1 tsp Kashmiri red chili powder
  • 1/4 tsp turmeric
  • 1/2 tsp cumin powder, roasted
  • 1/2 tsp garam masala
  • 1/2 tsp kasoori methi

Method to Prepare 

  • Roughly chop onions and tomatoes. Put it in the blender along with cashews green​ chillis, and make a fine paste.
  • Take a kadhai, add oil, onion-tomato paste, and cook it on medium heat until the oil separates. 
  • Then add curd. Cook it properly and keep stirring to avoid the curd to curdling. 
  • Once the curd is cooked, add malai and cook it again for a couple of minutes. 
  • Then, add salt, red chili powder, coriander powder, turmeric, and cumin powder. Let the bhaji cook for a couple of minutes. 
  • Then, pour some water to make gravy. Finally, add paneer chunks. Cover it and cook for 10 minutes. 
  • Finally, sprinkle kasoori methi and garam masala. Mix it well and let it cook for another two or three minutes.
  • Garnish with fresh cream and serve.
