Ingredients:

  • 1 kg of boneless meat, from the leg of the lamb
  • 1 cup of meat fat
  • 1 cup of mustard oil
  • 2 cups of milk
  • 1 cup of curd
  • 6 cups of water
  • 5 pieces of green cardamom
  • 2 bay leaves
  • 2 cloves
  • 3 brown cardamom
  • 1 large cinnamon stick
  • 1 teaspoon of ginger powder
  • 3 teaspoons of fennel powder
  • 2 teaspoons of dried mint
  • 1 teaspoon of asafetida
  • Salt, to taste

Method to Prepare:

  • Pound the meat on a smooth stone with a wooden mallet and add meat fat and pound it well again. This is the most important step of the dish.
  • Add brown cardamom powder, ginger powder, and salt to the meat. Pound till you get a smooth pulp out of it.
  • Make meatballs out of it and set it aside in a bowl.
  • Heat oil in a large vessel and add salt and asafetida in it to give it the first stroke of flavor.
  • Get a jug and beat curd in it. Now, add oil in it and keep on stirring until it is really well mixed.
  • Now, add water and remaining powder spices to give it the much-required flavor and lastly add milk and bring this gravy to boil.
  • Now, it is time to add meatball into the gravy. Add meatballs one by one.
  • Cook for 45 minutes on medium heat and then simmer it for the next 15 minutes.
  • Sprinkle it with dried mint to give it a refreshing flavor and serve it to the table.
